The End of Another Weekend

I decided to be a bum in front of the TV the rest of the afternoon and watched a marathon of Jon & Kate Plus 8. Sometimes being a bum is the way to go. :)

After a few hours of being a bum I was oddly inspired to do my 30 Day Shred Video. I missed out on shredding yesterday, but I will use my Sprint Tri and 2 Mile walk as my perfectly good excuse for the day.

I think each time I do the 20 minute work out it feels shorter and shorter, which is fine by me! My body is adapting to the moves and I am glad that I am now half way to starting level 2!

My fridge is now full to the max with vegetables from my overindulgent shopping at the Farmers Market today. Everything just looked too good! So for dinner I knew I wanted a veggie filled feast. :)

I revamped my ‘Cheesey’ Chickpea Cauliflower Casserole and made a Vegetable Extravaganza Cheesey Chickpea Casserole

I tweaked the recipe below.

  • 1 cup Broccoli
  • 1 Carrot
  • 1 Zucchini
  • 1 small Apple
  • 1/4 cup chopped Onion
  • 1/2 chopped Tomato
  • 1/2 Acorn Squash
  • 1/2 can Chickpeas
  • 1 cup Fat Free Milk
  • 1 cup Cheese (I used Sharp White Cheddar)
  • 1 tablespoon Whole Wheat Flour
  • Whole Wheat Bread Crumbs
  • Oregano
  • Garlic
  • S&P
  1. Preheat oven to 400 degrees
  2. Chop the Carrot, Broccoli, Zuchhini, Apple and onion into big chunks and place them on a baking sheet in the oven for 10 minutes
  3. While the veggies are roasting, peel the half of the acorn squash and cut into chunks. Microwave for 5 minutes or until smashable with a fork.
  4. On the stove top heat up the milk in a small sauce pan.
  5. Add the smashed squash and cheese to the milk mixture and wisk until combined
  6. Once the ingredients are combined season the cheese mix with the garlic, oregano and S&P. Add the WW Flour, bring to a boil then reduce to low to thicken.
  7. In a 8in baking dish combine the roasted veggies, tomato, chickpeas and cheese mixture
  8. Sprinkle with spread crumbs and any remaining cheese.
  9. Bake for 30 minutess at 375

I really enjoyed this, but did not find it quite cheesey enough. Next time there will be more cheese! :)

I did enjoy the multiple vegetables and the apple gave the savory dish and unexpected sweet twist that was very apeasing. :)

I had a piece of Pumpernickel Toast on the side.

For dessert I took advantage of my Strawberry Farmer’s Market find.

I had Teddy Grahams, Strawberries, Fat Free Cool Whip and a Bliss Chocolate Square on top. Yummy!

And now I am sad to say the weekend is just a couple hours away from being over. No fun at all. I hope everyone had a wonderful weekend as well and continue to enjoy the remaining hours of their Sunday evening.

Can't Keep Me Inside

Today has been as every Sunday should be…. all about food, family, and fun. :)

I woke up this morning to a beautiful crystal clear sky in sunny central Florida. I took full advantage of the sunny weather and through on my running shoes for a wonderful relaxing 5.5 mile run.

I developed a bit of a headache around mile 2 that did deter my run for a while, but I managed to push the pain out of my head and finish solid at an average of 9 minutes per mile.

After the run and shower, Derek and I decided to go to my favorite Orlando breakfast hot spot… First Watch.

I started with a hot mug of Mint Medey Tea. It tasted a little peppery to me for some reason.

And for my meal I ordered the Joaquin Yahoo.

I made my ordered a little complicated for the waitress by asking for egg whites, no sour cream, fruit instead of potatoes and a dry english muffin.

I ate and enjoyed every delish bite and even stole a few bites of Derek’s potatoes.

After breakfast we picked abbie up and headed to the local Farmer’s Market.

The farmer’s market had grown quite a bit since I was there last January. We are officially in full Farer’s Market Season.

There was so many fresh, yummy fruit and vegetables as far as the eye could see.

I definitely did some damage filling up my bags with goodies.

And please just assume anytime I walked by a sample of some sort I immediately tried and enjoyed it.

I enjoyed a $1 Unsweet Tea with Lemon with my samples.

At the Farmer’s Market we met up with my Parent’s, Sister, her boyfriend and the family boxer, Scooby.

Abbie had a blast at the farmer’s market. She made sure to clean up after everyone’s droppings.

And was able to score some high class treatment at the water fountain.

After the Farmer’s Market we headed to our favorite dog park where Abbie and Scooby had a great time splashing in the lake and rolling around in the dark. I would like to point out that Abbie was the only dog in the park who started out white and was completely black by the end! :)

Then for the second day in a row we decided to take a stroll around Baldwin Park.

We ate at the cutest Irish bar, that was right on the water called Paddy Murphys. The place was very spirited due t the just around the corner celebration of St. Pattys Day.

Abbie enjoyed her second time out and about in a row.

I ordered the Cobb Salad with no bacon bits and honey mustard vinegarette on the side.

Since everything on the menu had corn beef in it, the Cobb Salad was no different. It was an interesting twist that I very much enjoyed. I ate about 75% of this salad and relished every yummy bite.

My Sister and I also split an order of Sweet Potato Fries.

I mean how can you resist Sweet Potato Fries on the menu?

After lunch my Sister bought a brand new helmet to keep her safe when she decides to hop back on her bike.

This has been an amazing weekend. I am so thankful to live in such a wonderful climate where I could spend about 75% of my weekend outside. Luckily there’s still some daylight left so I am going to see how much more trouble I can get myself into outside! :)

On a closing note…Abbie wanted to say hi!
