Good Evening!
I am in a surprisingly good mood at the moment. Just loving like you know.
Work was great and quick. I had lots of tasks that kept me productive and focused. While working my little heart out I snacked on a couple of Multi-Grain Fig Newtons.

These were the last two of the package.
After work I went for Day 2 of the 30 Day Shred Challenge. And all I have to say is I was not looking forward to listening to Jillian Micheals today. My arms and legs were honestly a little sore from the 20 minute session I did yesterday.
However, I manned up and did level 1 all over again today and though I could really feel the parts that were already sore, I swear it was a little easier. I can’t wait to keep at it.
After Shredding I was hangry and ready for dinner.

It was not until I sat down to eat did I realize this was actually my second serving of fish today… ooops. Oh well, I guess I have just been craving fish today.
This time my fish of choice was Tilapia. I did an oven fry on the fish. I cut a fillet in half then dunked each half in a mix of egg whites and fat free milk then into some whole wheat bread crumbs. I baked at 400 degrees for 10 minutes, flipped the fish, and baked for 5 minutes.

The fish came out nice and crispy. I dipped the bites in to some Annie’s Cucumber Yogurt Dressing.
With the fish I had some left over roasted squash from yesterday covered in Country Bob’s All Purpose Sauce.

And some oven roasted Zucchini and Yellow Squash that were roasting in the oven for the same time and same temp as the fish.

On the side I had a slice of Pumpernickel Bread with a small smear of butter.

It was a beautiful plate of food to see and mighty tasty to eat.
To aide with my sweet tooth I had a small bowl of Edy’s Slow Churned Samoas Ice Cream.

Currently I am watching a wonderful document I would highly suggest to all runners titled The Spirit of Marathon.
It chronicles different levels of marathoners all training for the Chicago Marathon. It is really an inspiring movie and if you are planning on running a marathon in the future or are just an avid runner I would suggest renting it ASAP.

I’ll be staying with my friend’s family near Orlando this weekend before we leave for our cruise on Monday. She mentioned going to Downtown Disney on Saturday night. Let me know if you’ll be anywhere near there! I’d love to meet you.
Fish is wicked, ain’t nothing wrong with having it twice in one day. Seafood in general is the biggest reason I could never go vegetarian – I love the stuff. And since you live in a coastal location, why not take advantage of that?

I’ve got to rent that movie…how motivating! I’m afraid it may make me want to run a marathon, though, and I just don’t have that kind of time in my life right now.

I talked my brother into walking the Chicago Marathon in 1998 – he was living in Iowa at the time. I did Team In Training and would just send him the workouts. Until the Friday before the marathon – I get this hacking cough! I go to the doctor, he says I have bronchitis.
Okay, what can you give me so that I can walk the Chicago Marathon on Sunday?? Um, I don’t want you going to work on Monday!
Sadly, my brother Charlie walked it alone! But I rewarded him with White Castle Sliders when he got home!

do you buy fresh or frozen fish?
I buy all of my fish, chicken, meat, vegetables, etc fresh, never frozen. I usually buy fresh and if I don’t use it or have left overs I will freeze it myself later
Okay, seriously isn’t that ice cream to die for??? I couldn’t buy another container because I don’t think I could control myself, ha!
I’m not 100% sure, but I think you can turn off Jillian’s voice! Might be worth a try since you’ll be doing the same levels over and over again!
THat was a great movie! I saw it in times square with a bunch of marathon friends right after San Fran Marathon. I think everyone in the theatre was a runner/marathoner which made it so fun to watch. love it.
