Tofu Fried Rice

Who doesn’t love greasy chinese food?

Fried Rice is my particular favorite. I remember back in college I used to order from a particular chinese place simply because their combos came with fried rice rather then plain ole boring steam rice. Fried rice was always the better option. ๐Ÿ™‚

Dinner tonight takes a healthier approach on one my favorite classics.


To make my version of Fried Rice a bit healthier I made a few changes. I used short grain brown rice, steamed the vegetables rather then having them cook in oil, had a non-traditional sauce and used very little oil in the process. ๐Ÿ™‚


Tofu Fried Rice

  • 3/4 cup cooked Short Grain Brown Rice
  • Sesame Oil
  • 1 egg
  • Veggie mix of Broccoli, Cauliflower, & Carrot
  • Baked Tofu
  • 2 Tablespoons Country Bob Stir Fry Sauce
  • Sesame Seeds

I marinated a 1/2 block of Tofu in Soy Sauce and baked it in the oven at 400 for 30 minutes, turning once. On the stove top I lightly coated a wok with the sesame oil then cooked the egg in the hot pan. Once the egg was cooked I added the brown rice. In a separate pot I steamed the veggies then added them to the rice mix as well as the tofu. Once everything was mixed, I added the Stir fry sauce and let it all the flavors mend together for 5 minutes. When everything was finished I garnished with sesame seeds.


It was very easy to make and more then easy to eat. Yum! Exactly what I was looking for with non of the greasy feeling chinese take out usually gives me.

Dessert is a secret for now. I will explain it in the morning, but for now I will just leave you with this picture and the answer that yes, it was as good as it looks.:)


Thank you to everyone for you advice on my blister. I bought some Moleskin after work and am hoping to give it a shot on my run tomorrow morning.

Yay, I love fried rice too, especially when it’s not super-greasy and filled with MSG.

oooh, i have tofu AND country bobs right now. i’m definitely adding this recipe to my weekend rotation!

can i guess on the dessert?? because it almost looks like a soft pretzel with melted chocolate and pb swirled on top of it?? which sounds like a pretty incredible combination …

Yay! Thanks for the shout out! It’s crazy to imagine myself needing to stop at 5 miles now. Weird how that happens. I’m totally excited for the Croom’s Fools Run…and earlier I thought Caitlin was talking about your dog too and got confused. Thanks for clearing that up. Your chinese looks yummy. What is that dessert?!

This is going to be a blast! Come on, I know you want to do the 50k. You are totally ready for that distance! Come on…a few weeks ago I went back to Utah and did a 50k with one of my good friends and it was her very 1st one, she had barely even trained, but since we took it easy, she finished and did great! Do I have you convinced yet???

I read your blog just about every day and I realized I never comment! I need to start commenting regularly, haha! I love it and am so inspired by you! I have a question, though. When you run on the treadmill, do you run on an incline? Do you find that it’s easier to run outside or on a treadmill? Yay! I hope to hear from you!

When I’m on the treadmill I run on a 1% incline unless I’m simulating a hilly run, then move the incline up and down through the run. And I find running outside soooooo much easier then on the treadmill. The scener is better and you actually feel like you have a goal of point to run to so it makes it so much quicker of a run in my head. ๐Ÿ™‚
