Tofu Fried Rice

Who doesn’t love greasy chinese food?

Fried Rice is my particular favorite. I remember back in college I used to order from a particular chinese place simply because their combos came with fried rice rather then plain ole boring steam rice. Fried rice was always the better option. :)

Dinner tonight takes a healthier approach on one my favorite classics.

To make my version of Fried Rice a bit healthier I made a few changes. I used short grain brown rice, steamed the vegetables rather then having them cook in oil, had a non-traditional sauce and used very little oil in the process. :)

Tofu Fried Rice

  • 3/4 cup cooked Short Grain Brown Rice
  • Sesame Oil
  • 1 egg
  • Veggie mix of Broccoli, Cauliflower, & Carrot
  • Baked Tofu
  • 2 Tablespoons Country Bob Stir Fry Sauce
  • Sesame Seeds

I marinated a 1/2 block of Tofu in Soy Sauce and baked it in the oven at 400 for 30 minutes, turning once. On the stove top I lightly coated a wok with the sesame oil then cooked the egg in the hot pan. Once the egg was cooked I added the brown rice. In a separate pot I steamed the veggies then added them to the rice mix as well as the tofu. Once everything was mixed, I added the Stir fry sauce and let it all the flavors mend together for 5 minutes. When everything was finished I garnished with sesame seeds.

It was very easy to make and more then easy to eat. Yum! Exactly what I was looking for with non of the greasy feeling chinese take out usually gives me.

Dessert is a secret for now. I will explain it in the morning, but for now I will just leave you with this picture and the answer that yes, it was as good as it looks.:)

Thank you to everyone for you advice on my blister. I bought some Moleskin after work and am hoping to give it a shot on my run tomorrow morning.

I also want to give my sister a SHOUT OUT for setting a new PR and crossing over to the double digits today! Congrats Kelly for running your first 10 miles!!!! I’m also excited to announce that she will be joining Caitlin, Abbie (the person, not the puppy ;) ) and I for the Croom Fools Run in April!!! :)

Soup & Pita

I think it hit me on my drive back from lunch that I am half way through Wednesday. Boy this weekend is flying by!! Which is fine by me, considering I have another great weekend planned!

Here’s what I’ve got on the agenda so far:

  • Friday Night: Bike Ride, Dinner and Slumber Party with my Sister!
  • Saturday: My first Lake Swim in preparation for my upcoming Tri, Shopping with my Sister and Dinner with the Parents
  • Sunday: Tampa and Britney Spears concert!!

It is another busy weekend that will have me kicking myself in the butt on Monday, but hey we only live once. :)

Does anyone else have their weekends booked until June?

Speaking of only living once… I had packed my usual two Multi Grain Fig Newtons for a snack today and at the last minute decided three would be more satisfying so a third one made its way into the bag.

Lunch consisted of my favorite combo ever…… Pita and Soup.

I stuffed an Oat bran Pita with Avocado, Spinach, Tomato, and Cucumber then drizzled with some Annie’s Cucumber Yogurt Dressing. Yum!

On the side I had a cup of left over Red Lentil & Peanut Butter Soup.

I have to say, I think my favorite thing to freeze and reheat is soup. It’s such a great quick freezer pick.

Blisters, Waffles and a New Race
