Must… Feel… Warm

I am struggling to get warm at this moment. I have on two long sleeve shirts, comfy socks, pjs, two throw blankets and of course my mini heater, Abbie, is on my side.

Why am I so cold, you may ask?

Apparently bike riding at sunset when it’s under 50 degrees outside is a bit chilly. Caitlin and I met for our 7.17 mile bike ride on probably the most chilly night this week. It’s nice to know that the cold won’t last long and if we do the same bike ride next week it will still be light out thanks to Mr. Daylight Savings Time. :)

Before the bike ride I fueled up with a Clif Dark Chocolate Walnut Nectar Cacao Bar.

I knew I would be starving when I returned home from the bike ride, so at lunch I brought out some left over Zucchini & Yellow Squash Lasagna from the freezer for a quick heat up when I walked in the door.

The hot lasagna was perfect to warm me up after the cold bike ride. I enjoyed the lasagna with a cup of hot tea and the last of my Multi Grain Cranberry Walnut Muffins.

I know some of you were curious of where I found these babies, if you would like to sample them yourself the muffins can be found at you friendly neighborhood Publix Bakery.

For dessert I enjoyed two Tag-Along Cookies.

Soooo much for satisfying then my 100 calorie bag of air from yesterday. :)

Caitlin and I have an exciting announcement tomorrow concerning an upcoming race. You may call us, crazy but we don’t care, we just love to run! :)

This one is for you, Ryan!

I dedicate my lunch today to Ryan over at Chasing Daylight. After I made this wrap a couple of months ago, I saw it pop up on her blog over the entire next week… I think she may have enjoyed my creation. :)

So what was the wrap that drove Ryan’s taste buds crazy?…. Sweet Potato, Goat Cheese & Spinach…. Mmmmm

As soon as I decided to make mashed Sweet Potatoes as a side for dinner last night I knew this was in the forecast for lunch. I simply filled the wrap then pressed it in the George Foreman until the wrap was crispy and the cheese was melty. It was the perfect combination.

Not all of the sweet potato would fit in the wrap, so I improvised and add the rest on the side with Black Beans on top.

It doesn’t look very appetizing, but trust me it was good!

I also had an assortment of Cucumber and Tomato Slices because I feel my meal was not quite colorful enough yet.

For my midmorning snack I decided to reach out and try something different.

I had 1/2 cup of Fat Free Cottage Cheese with Cinnamon sprinkled on top and a few Crackers on the side. It was a very good combination.

This morning I loaded my bike in my car in hopes of getting a ride in after work. My hopes were sealed when Caitlin e-mailed me this morning asking if I would join her on a ride. For some reason having a partner to run with or go on a bike ride with always gets me that much more pumped for the particular activity. Thank God for Caitlin and the level of commitment to exercising that we share! :)

Recovery… Day 2
