I had a craving tonight for good ole fashion BBQ.
Growing up in the south barbeque food will always have a place close to my heart. However, barbeque usually means fatty smoked meats covered in a thick rich sauce with a side of fried goodies and buttered veggies. God for the tastebuds, bad for the waist and heart.
Luckily, I have learned to still enjoy my southern roots… just in a much scaled back ‘healthified’ version.
Tonight it was all about the BBQ Tofu.

I used the last droplets of my Annie’s BBQ Sauce which I mixed with some Texas Pete’s Buffalo Sauce then marinated the tofu in. I baked the tofu at 415 for 30 minutes, turning half way through. AMAZING!
To make up for the traditional full fat mashed potatoes I made Mashed Sweet Potatoes with a small spoonful of margarine and some non-fat plain yogurt.

They came out wonderfully rich and creamy. I also roasted up some Asparagus in the over for about 5 minutes too long. It’s amazing how much they shrink up when they cook too long.

All that was missing was a big ole hunk of Cornbread!
For dessert I had about 1/4 cup of Vanilla Chobani, a spoonful of Pecan Praline Granola and a small handful of TJ’s Mini PB Cups.

It was almost like a mini PB Sundae
This afternoon my cubicle neighbor gave me one of her 100 calorie bag of Girl Scout Cookies to sample.

They were ok… I’m just not the biggest fan of 100 calorie packs of anything. I would much rather have two tag alongs for 150 calories then this mini bag of air…lol
I am still debating whether I will be running or not in the morning. My quads are still really tight and in order to prevent injury I think I need another morning of rest. I am also considering cross training of some sort. My bike, Blue, sure looks lonely hung up in the closet.

Your dinner looks remarkably like mine!!!!
im not a big fan of the 100 calorie packs either! i feel like i could eat 3 of them in one sitting, haha..
love the tofu.
i suggest no run. better to be safe than sorry. i’ve strained way to many muscles that way.
bbq tofu! we had that Saturday night
I love BBQ tofu!! 100 cal packs kill me – especially when you could just portion your own out (i.e. Goldfish)!
Awesome dinner! Love the bbq tofu and mashed sweet potatoes!
I have been craving BBQ tofu! Wish I had your dinner tonight!

Sweet mashed potatoes, what a great idea!
Mashed sweet potatoes with yogurt sounds delish…I’ll have to try that.
Oh wow – the 100 cal packs of GS cookies is new to me. Didn’t have those back in my day, haha! Totally agree with you – have a couple of the real things! SO satisfying.
Some good 100 cal packs are the whole natural almonds from Emerald or the guacamole packs since I tend to over-eat both.
Question: How long do you marinate your tofu for and in what?
dinner looks delish! I’m with you on the 100calorie pack though, I’d much rather eat 200calories of something that tastes good. Plus, they are the next plastic water bottles to our Earth crisis.

I had BBQ tonight too. It’s just so good! I made some BBQ mushroom quesadillas..random but awesome.
Yum, yum, yum!!! What a great mashed potato alternative. I love it!
I hate those 100-cal packs on principle — you’re paying like a 400% mark-up just for them to pre-portion snacks for you!!
What a fabulous way to reform a Southern classic
I’m with you on Southern girl love for BBQ. It is so good! I love your healthy version!
I think I just found a new use for my BBQ sauce…
I think I am probably with you on the girl scout cookies!
Your dinner looks perfect by the way.
I agree on 100 calorie packs. Boo.
I’d try to walk tomorrow, but probably wait another day to run.

I agree, i’m not the biggest fan of 100 calorie packs either.
That dinner sure looks great tho!! I’ll be trying yogurt in my mashed potatoes next time!!
BBQ TOFU! I just had some last night too, but I put it in a salad. I agree, where’s the cornbread?! haha now I’m craving it.
That meal looks a.ma.ZING! Mashed sweet potatoes are incredible.
I don’t really like 100 calorie packs either. I used to buy them but took forever to eat them because I always wanted something more “real” as a snack. Those things just aren’t satisfying!
What a great BBQ meat subsititute, and I love love love mashed sweet potatoes, soooo good! I find 100 calorie packs annoying they are definitely like eating air.
