Good Ole BBQ

by Meghann on March 2, 2009

I had a craving tonight for good ole fashion BBQ.

Growing up in the south barbeque food will always have a place close to my heart. However, barbeque usually means fatty smoked meats covered in a thick rich sauce with a side of fried goodies and buttered veggies. God for the tastebuds, bad for the waist and heart.

Luckily, I have learned to still enjoy my southern roots… just in a much scaled back ‘healthified’ version. :)

Tonight it was all about the BBQ Tofu.

I used the last droplets of my Annie’s BBQ Sauce which I mixed with some Texas Pete’s Buffalo Sauce then marinated the tofu in. I baked the tofu at 415 for 30 minutes, turning half way through. AMAZING!

To make up for the traditional full fat mashed potatoes I made Mashed Sweet Potatoes with a small spoonful of margarine and some non-fat plain yogurt.

They came out wonderfully rich and creamy. I also roasted up some Asparagus in the over for about 5 minutes too long. It’s amazing how much they shrink up when they cook too long.

All that was missing was a big ole hunk of Cornbread!

For dessert I had about 1/4 cup of Vanilla Chobani, a spoonful of Pecan Praline Granola and a small handful of TJ’s Mini PB Cups.

It was almost like a mini PB Sundae :)

This afternoon my cubicle neighbor gave me one of her 100 calorie bag of Girl Scout Cookies to sample.

They were ok… I’m just not the biggest fan of 100 calorie packs of anything. I would much rather have two tag alongs for 150 calories then this mini bag of air…lol

I am still debating whether I will be running or not in the morning. My quads are still really tight and in order to prevent injury I think I need another morning of rest. I am also considering cross training of some sort. My bike, Blue, sure looks lonely hung up in the closet. ;)

Flying By

by Meghann on March 2, 2009

Wow, is it really 3:00? This day is going by quicker then I realized!

I guess that’s what happens when you have a nice pile of work to weed through on your desk to keep you entertained. :)

While weeding through the work I sampled this Carman’s Original Fruit-Free Museli Bar I received in my Gasparilla goodie bag this weekend.

The bar says it comes from Australia and is something I never heard of. It was pretty good though, not sweet all. I liked it.

For Lunch I had some Datz Deli Leftovers.

I spruced up the other half of my Lettuce Entertain You Salad by adding some Cucumber and Carrot.

On the side I had some left over Potato Latkes and Cranberry Walnut MultiGrain Muffin.

Not sure why none of my photos were in focus? I hate it when they look fine on the camera but when you blow them up on the computer they’re fuzzy. :(

Reflections

A few commenters have been asking the question about whether the races I completed this weekend affected my feelings towards registering for the San Diego Rock n’ Roll Marathon on May 31st.

I’ll admit it, when I finished that half yesterday the first thing that flashed in my mind was the thought that I would only be at the half way mark for my future marathon and that thought scared the hell out of me.

But the more I think about it and the more the accomplishments of the weekend sink in, the more I realize I am ready more then ever to compete in this marathon. I say bring it on! If I can run 3 races this weekend and PR two of them at a 9 minute mile pace, then I can do anything!!

I plan to train to complete the marathon just under 10 minute miles with a goal of completing at 4:30 and I have more faith in myself more then ever that I can do it. I am so HAPPY I will be running the marathon in May and can not wait to officially call myself a marathoner!! :)

Recovery

March 2, 2009

I have to admit it, that first step out of bed this morning was a tough one. I was lazy and did not stretch as I should have the night before… BIG mistake. I felt like all my muscles in my leg had bounded together in a nice tight ball and were refusing to unwind more »
