Packing Pack Packerson

by Meghann on February 26, 2009

Ahh.. I’m so excited! I am packing my little heart out for this weekend. Caitlin and I are heading to Tampa right after work tomorrow, so I have to have everything packed and loaded before I go to sleep.

While packing I have managed to get a great dinner in.

I love Spaghetti Squash and have had one sitting on my counter for a couple of weeks begging to be manipulated into something fabulous. I think I made this little squash’s dreams come true.

CIMG5698.JPG

After roasted the spaghetti squash in the over for 30 minutes I made a wonderful pink sauce by combining Tomato Pasta Sauce and Plain Chobani Yogurt. I added some Spinach, Shrimp and Scallops to the sauce, then garnished with Green Onion. I also had some roasted Brussel Sprouts around the side.

CIMG5699.JPG

The Pink Sauce was a last minute decision when I was looking at how little was left in the pasta sauce jar and the half empty chobani container was standing next to it. The combination really worked well and made for a wonderful rich, but not sinful, sauce for the faux spaghetti.

For dessert I had two Tag-a-longs.

I don’t care what the box says, these will always be tag-alongs to me ๐Ÿ™‚

This afternoon I snacked on this small Apple while working away at my desk.

Another BIG Thank You to Derek for graciously volunteering to send 5 Pretzels to 5 Lucky readers. A big CONGRATS to Hallie, Ryane, Amisha, Anne, and Joleen for being the first 5 to send him an e-mail.

Just remember ladies that in order to enjoy these pretzels to their fullest potential you need to heat them up in the oven so they get nice and crunchy. E-mail me if you have any questions. ๐Ÿ˜‰

Now I must get back to packing. Got to make sure I have everything I need for the big weekend. ๐Ÿ™‚

Is anyone else running a race this weekend? If so.. GOOD LUCK!!!! ๐Ÿ™‚

I want to go to Tampa! This cold weather in Wisconsin is getting old! Seriously there was like a cm of ice caked on my windows this morning, I even had to crawl through a different door because my door was frozen shut!

I am JEALOUS!!! But, good luck in your race this weekend, hopefully it won’t be too icy here so I can actually get in a run without feeling like I am on a skating rink!

35 Allison February 27, 2009 at 8:55 am

That dinner looks fantastic – LOVE all the colors!~

36 Kristie February 27, 2009 at 9:08 am

So excited for my pretzel! Thanks again to you and Derek ๐Ÿ™‚

Tag-a-longs and Samoas still exist. Your local Girl Scout Council must have switched baking companies. There are actually two companies that produce Girl Scout Cookies! I actually think the ones with the generic names “peanut butter patties” are bigger cookies…. ๐Ÿ™‚
I was a girl scout for a long time….

Good luck on your races this weekend~
