Packing Pack Packerson

Ahh.. I’m so excited! I am packing my little heart out for this weekend. Caitlin and I are heading to Tampa right after work tomorrow, so I have to have everything packed and loaded before I go to sleep.

While packing I have managed to get a great dinner in.

I love Spaghetti Squash and have had one sitting on my counter for a couple of weeks begging to be manipulated into something fabulous. I think I made this little squash’s dreams come true.

After roasted the spaghetti squash in the over for 30 minutes I made a wonderful pink sauce by combining Tomato Pasta Sauce and Plain Chobani Yogurt. I added some Spinach, Shrimp and Scallops to the sauce, then garnished with Green Onion. I also had some roasted Brussel Sprouts around the side.

The Pink Sauce was a last minute decision when I was looking at how little was left in the pasta sauce jar and the half empty chobani container was standing next to it. The combination really worked well and made for a wonderful rich, but not sinful, sauce for the faux spaghetti.

For dessert I had two Tag-a-longs.

I don’t care what the box says, these will always be tag-alongs to me :)

This afternoon I snacked on this small Apple while working away at my desk.

Another BIG Thank You to Derek for graciously volunteering to send 5 Pretzels to 5 Lucky readers. A big CONGRATS to Hallie, Ryane, Amisha, Anne, and Joleen for being the first 5 to send him an e-mail.

Just remember ladies that in order to enjoy these pretzels to their fullest potential you need to heat them up in the oven so they get nice and crunchy. E-mail me if you have any questions. ;)

Now I must get back to packing. Got to make sure I have everything I need for the big weekend. :)

Pretzel Lunch

I can not thank Derek enough for the wonderful Pretzel he sent me all the way from Tampa! I decided to have the remainder to the Pretzel be the start of my lunch today.

I had to break the pretzel in pieces so it would fit in the office toaster oven, but it was well worth it to heat it up that way. The exterior was nice and crispy while the inside was chewy.

I paired the Pretzel with a cup of Amy’s Chunky Tomato Bisque.

I felt like I was having pizza sticks when I dipped the pretzel into the Tomato Soup. It was an awesome combination.

I also had a Reduced Fat String Cheese that made for great dipping as well.

I got a few comments from co-workers when they realized my lunch was a giant pretzel, it made them all laugh. But seriously these pretzels are a meal in themselves and a darn good one at that. :)

More Blogging Bake Sale Raves 

I just wanted to share some more Blogging Bake Sale loving. I received these e-mails from both Joleen and Ashley who are enjoying their Bake Sale purchases.

Just wanted to thank you for the great challah and adorable packaging! I toasted some as soon as I tore open the box and was really impressed! It made great french toast this morning too – something tells me it won’t be around very long!

Hi Meghann and Liz,

I received the blondies and they were fantastic! They are really moist and if I had not known, I would have never guessed that there was a larabar in them!  The bar gave them a great flavor that did not scream coconut, but flavored it nicely. Liz, you should seriously send that recipe to the larabar company, if you have not already. I have attached a picture of me enjoying a blondie and my dog, Jack, watching.
