I love midweek presents.
I was very happy to discover two packages when I checked my mailbox this afternoon.

The first was a Trio of Vegan Carrot Cake Whoopee Pies, Nicole was gracious enough to send me after I drooled over them on the Blogging Bake Sale.

It was so hard not to eat all three right when I opened the package.
The second was something I may have begged for over the weekend.

My dear friend Derek teased me this weekend when he sent me a photo of one of Jenna’s Pretzels from Greenwise. I was beyond jealous and decided I could not wait another week to have a pretzel.
Luckily, Derek is this amazing, great, wonderful guy who mailed me a Pretzel right away so I would not have to wait for the carby goodness. (Is that enough blog recognition?
) Thank You Derek!!
Before I came home and discovered my goodies, I had 2 Multi-Grain Fig Newtons this afternoon.

I have been wanting to try Sarah’s Red Lentil and Peanut Soup for a while, but was unable to purchase red lentils until this past weekend. After work I got straight to work putting together this creative meal straight from her directions. It took a little extra time to make, but was well worth it. I highly suggest giving this recipe a try!

The soup was so wonderfully creamy, but not too heavy. I topped my bowl with some fresh green onion and had had a 1/4 of my giant Pretzel on the side.

It was a great dinner and followed by a great dessert.

I immediately dug into one of Nicole’s Vegan Carrot Cake Whoopee Pies as soon as I cleaned my bowl. It was just as I imagines, sweet and light. I LOVED it. Thank you Nicole for sending some of your extras my way!
Alright, time to do some laundry so I will have some clean sports bras for this weekend. Good night everyone!

I was wondering how many calories do you eat a day? And do you track them? Also, do you have a plan of like how much fruit/vegetables, grains, dairy, fat, etc. that you aim for each day?
I’m trying to lose weight but I always plan a day with a good amount of calories 1400-1600 and I try to get in all the food groups, but I still am hungry, or I mess up with over eating.. I feel I can’t get into the swing of things with diet and exercise to see any results…

No, I do not count calories. I tried a long time a go and felt so restricted that I agave up. i found I lost more weight when I just listened to when my body wanted to eat and try to eat balanced meals. Also when I plan my food for the day I don’t like to look at it like a set science experiment of disecting my needs. I pretty much eyeball all of my meals and make sure I get a little bit of everything for the day. I don’t have any set requirements, but if I feel i was lacking veggies or protein in the ladder part of the day then I will make sure to have a lot in my dinner.
My advice is to just listen to your body. Try not to overcalculate everythign and relax. If you’re eating a balanced meal and exercising the weight should slowly come off. Remember not to rush it. It’s a slow process that takes time.
