Whoa, after a 6 miler on Saturday and a 12 miler on Sunday, Team in Training was tough tonight!
When the boys I had ran with a couple of weeks ago took off tonight at an 8:00 minute pace I knew I would kill myself if I tried to keep up so I scaled it back to an 8:30 pace. That way they were kept in my sight, but not so where I was killing myself to keep up.
I ended up running a 5k in 27:14… that’s an 8:31 pace! After my 5k I walked a lap with some of the girls who were walking the course. Then we did a boot camp style work out that involved jump roping, lunges, push up and crunches.
After the practice I was beat, but rewarded with a Hersheys Hugs they gave to everyone.
Before I left work today I had a Chocolate Peppermint Stick Luna Bar to fuel me up.

I was surprisingly not starving when I returned to my apartment..maybe it was the hersheys?… so I had time to put together a decent dinner.

I made a Black Bean and Refried Bean Burger with some cans of beans I had in the fridge.

I used about 1/3 cup of refried beans, 1/3 cup of black beans, green onion, chili powder, salt and just enough whole wheat bread crumbs to hold it all together. I then pan fired the burger till it was heated through and topped it with some Spinach, Tomato and Country Bob’s All Purpose Sauce.

With the burger I had some Rutabaga Fries I seasoned with Blacken Seasoning then baked in the oven at 415 for 20 minutes. I dipped the fries in a mix of Country Bob’s All Purpose Sauce and Ketchup.
I also had a pickle for some more green.
It was a great, satisfying dinner that was relatively quick and easy to put together.
For dessert i had the last 1/2 cup of my Carmel Praline Crunch FroYo with a sprinkle of Praline Pecan Granola on top.

I am so ready for bed now… my pillows are calling my name its not even 9:00 yet. Oh well, the pillows win. Good night!

Caroline – I prepped the rutabaga fries just as I would potato fries. I cut the rutabage in fry shaes, seasoned them, then baked at 415 for 20 minutes, turning then at the 10 minute mark. Pretty easy.
That burger looks so good it hurts.
