A Wonderful Sunday

I present to you the Blog Worthy Cupcakes

Aren’t these adorable?!?! My Uncle did all of the decorating himself by hand. Apparently he has this hidden cake decorating talent that I never knew about it. Too bad none of this skills got in my genes. lol

It was great see all of my family this afternoon in celebration of my baby cousins’ baptisms. There was quite a party food spread of pizzas, fruit and salad.

I grabbed 2 slices of Veggie Pizza, Some Salad and Fruit on my plate.

It was fun telling everyone I had ran 12 miles that morning and an over 1000 calorie deficit to fulfill. :)

I also add an adorable cupcake with more fruit on the side.

I wanted to get a picture of the two guests of honor in their adorable white christening outfits but they are 2 and 4 therefore impossible to have sit still together for longer then 5 minutes. :)

After the baptism celebration I was a lazy bum and napped before running to my weekly grocery store run. I snacked on a TJ Chocolate Chip granola bar, Tami was kind enough to send me.

I was feeling Indian for dinner tonight and discovered this recipe for Yellow Curry Chicken with Basmati Rice on the blog Just Taste by Kelly Ann.

The only changes I made with the recipe was adding cauliflower and kale in place of green beans and peas.

It was really simple and took me less then 30 minutes to make, which is good since I was meeting my friend to see Confessions of a Shopaholic about 45 minutes after I started cooking. :)

Before the movie I have a Non-Fat Sugar Free Vanilla Roobios Tea Latte.

The movie was so cute, but so different form the books. I am a big fan of the books and have re read all of them at least 3 times. In the movie they took key characters from the book and just shifted their roles. Like I said it was good, but if you haven’t read the books I would highly suggest you pick up copies ASAP!

Alright its past my bedtime and I actually have to go to work tomorrow….booo! Only 5 more days until the weekend. ;)

Bowling and Running

It’s official: I suck at bowling. ;)

I always ‘try’ to aim for 100 when I bowl and sadly out of 2 games I got a 72 and an 88.. sigh… at least it was a fun night anyways. :)

I started the evening off with a yummy prepared at home meal.

I made an egg salad sandwich using Jenna’s Oatmeal Bread.

In the Egg Salad I had:

  • 2 Hard Boiled Eggs
  • Honey Mustard
  • Fat Free Mayo
  • Buffalo Sauce
  • Mushrooms
  • Garlic
  • Onion
  • Sprouts

It was a very yummy mixture and the perfect sammy.

On the side I had some Rutabaga Fries with Ketchup.

Seriously these thing are to die for!

Then I met my Twin Bro and his friend, Stephen, for a night of bowling at Firkin Kegler.

While we waited for our lane I enjoyed a Shock Top.

I had a really great time with the Twin Bro and Stephen! Too bad they don’t live in Orlando permantly! There’s nothing like being goofy and not caring around family.

After bowling I totally crashed in preparation for the 12 mile run Caitlin talked me into running this morning.

Before the run I had two pieces of Oatmeal Bread Toast which I slathered with Cashew Butter, Blueberries and Strawberries.

I have found the combination of bread, nut butter and fruit to be the perfect long run fuel.

We met bright and early at Wekiva Trail to knock out the 12 miles in preparation for our races next weekend.

It had been a while since I had done a run over 10 miles so I was very thankful to have a buddy to run with. When we got bored of the run we would talk and when I got into the zone and started pacing 8:30 when I should not have at mile 8 Caitlin told me to calm down and slow it up.

At the turn around point at mile 6 I tried the Watermelon Luna Moons Caitlin had given me for my birthday.

It was my first time trying a mid run fuel snack and I have to say I enjoyed it. Having that extra boost of sugar really helped me run those last few miles.

I really felt great the whole run and am beyond pumped for next weekend. At the end I sprinted the last .1 miles at 6:30 pace and felt like I could have kept going farther. I so want to break the 2 hour mark at the half!

Here are the stats:

Distance: 12 miles

Total Calories Burned: 1169

Average pace: 9:57

Average Heart Rate: 158

With over a 1000 calorie deficit it seems pretty obvious that I was ready to eat as soon as I walked in the door.

Melissa had talked me into buying this protein shake powder a couple of weeks ago and I figured this would be the perfect time to try it.

I added the Hemp Protein Mix, Milk, Ice, Peanut Butter, Strawberries and Blueberries to the blender and ended up with a yummy chocolate shake.

I was impressed. I’ve never really tried protein mixes before, but I have to say this one was not bad at all.

I also had a small bowl of Kashi Honey Sunshine and Blueberries on the side.

Now I need to shower and drive across town to my cousin’s daughter’s baptism. She already sent me a text message that her Dad made cupcakes that ‘are totally blog worthy’ so I can’t wait! I need to fill that 1000 calorie deficit after all. ;)
