It feels so good to be home on a Friday night. I never thought I would say that, but I am glad to have this night to myself. Currently I am in my PJs sipping on a cup of Hot Tea, preparing to watch High School Musical 3 on DVD and could not be more content.
It was a perfect Friday afternoon as well, thanks to my bike Blue.
Before I took off on Blue, I fueled up with my first Luna Cookie.

I really enjoy the concept of Chocolate and Mint so this did not disappoint. It was tasty and served its purpose well of keeping me fueled through my afternoon bike ride.
I was very excited to get to take Blue out after work. I really wanted to break him in and get my first long bike ride in. Being new to biking I wasn’t actually sure what a good ‘long’ distance would be for me so I started out thinking I would go 10 miles. Once I was on the trail I ended up enjoying the ride so much I ended up doing 12 and felt fabulous!
I also got to test out the Bicyclist feature on my Garmin.

And of course Safety first. I made sure to have my helmet and sunglasses for the entire ride.
After such a great bike ride, I was famished and looking forward to a quick and easy dinner. I went with simple and heated up a mixture of left overs.

I started with some left over Steamed Cauliflower and Brussel Sprouts from Wednesday, then covered them with left over Lentil Chili from a couple of weeks a go and topped with Goat Cheese.

With a piece of Oatmeal Bread for dipping.

Dessert came from a special package I received this afternoon.

No, I didn’t just receive TJ Granola Bars, I just find the packaging amusing.
After reading all about Audrey’s raves about Tami’s Whoopee Pies, I was pleasantly surprised to see some Whoopee Pies and other goodies in the box thanks to Tami.

She also sent me a great CD with some upbeat music that I can’t wait to run to this weekend.
I waited until after dinner to sample a Whoopee Pie.

OMG!!! I understand what Audrey was talking about now. These little cakey pieces of heaven are amazing! I could have easily ate more, but I managed to stop at one. It’s best to savor them over time.

And for those of you dying to make these little babies at home, Tami was gracious enough to send the recipe as well.
Whoopee Pies

For the cake part, mix the following together
1 cup sugar
2 cup flour
1 tea. baking soda
1 tea. baking powder
5 table. cocoa
1/2 cup crisco
2 egg yolks
1 cup milk
1/2 tea vanilla
using the smaller cookie scooper (about 1 tablespoon) put on ungreased cookie sheet for 10-12, should be firm to touch when done.
For the cream party, mix the following together
1/4 soften butter
1/2 cup crisco
3/4 cup confectionary sugar
2 tea. vanilla
1 1/2 cup marshmallow fluff
mix together and beat until fluffy. Spoon out cream on one pie and top
with a matching pie. Makes about 20 pies, recipe can easily be doubled

Just wanted to let you know how DELICIOUS the chocolate cashew toffee and carrot cake whoopee pies are!
I got the toffee on Saturday and didn’t stop eating it until Sunday. It came in a huge bag and I can’t even tell you how many pieces there was. I took the pictures after I had eaten…oh half the bag?

I took some to a family party and everyone loved them. I can’t even describe in words how good it was…seriously addicting. I have 5 leftover in my freezer for after dinner treats.
The whoopee pies arrived today and were out of this world. I got 10 individually wrapped, and had to have one as soon as I opened the package. They are very moist and the filling was just sweet enough. I had to freeze these as well so I wouldn’t OD.
I loved both of my purchases and am so glad I could help you raise money for a wonderful cause!!
