My friend bailed on our movie date tonight. As much as I’ve been dying to see Confessions of a Shoppaholic (LOVE the books!) I was looking forward to a chill night in.
When I realized I would actually have time to put together a thought out meal tonight, I spent the rest of the afternoon brainstorming what fun, great meal I could create when the contents of my fridge. I think I came up with a fun and tasty meal.
I refer to this as my Anti-Meatball Italian Sub. Nothing against meatballs, I was trying to be creative here.

The base was a good size piece of Jenna’s Oatmeal Bread. In place of the run of the mill meatballs, I had steamed Caulitflower and Brussel Sprouts on the bread, then some Pasta Sauce and a slice of Swiss Cheese.

This was PERFECT! It tasted just like a regular ole Meatball sub. It was a great fun twist that snuck some extra veggies into my meal.
Of course I really didn’t have a problem with veggies in my meal, on this side I had this overflowing salad of veggie goodness.

In my bowl was Spinach, Carrot, Snap Peas, Mushrooms, Tomato, Cabbage, Pecans, Sprouts and a drizzle of Orange Poppyseed Dressing.

This was a great fun meal, that came out even better then I had pictured in my head.
Dessert consisted of some Carmel Praline Crunch FroYo with a spoonful of Pecan Praline Granola on top.

This afternoon I had a Dark Chocolate Coconut Kashi bar for a mid afternoon snack.

Now I am going to take full advantage of this free time and veg out on the couch. Good night everyone!

First of all, if you haven’t already you should go check out Caitlin’s Blog for a chance to win a RoadID.
I actually just ordered mine online the other day and full intend on blogging about all the great reasons to have one when mine arrives in the mail. Until then Caitlin has a great post on why it is so important to have some kind of information on you when you run or bike alone.
Mid-morning I had the rest of my box of Kashi Crackers with some Sabra Jalapeño Hummus. Yum!
Lunch was a quick 5 minute meal, thanks to a little help from my friend Amy.
My cousin Andrea had featured this soup on her blog last month and I have been itching to try it ever since.
On Sunday night I had accidentally over-roasted half of an Acorn Squash with plans to remake my successful Acorn Squash Soup Bowl concept I had discovered in Colorado.

Unfortunately the Acorn Squash was way to soft to hold the soup so the concept was defeated. However; I still enjoyed the Curried Lentil Soup with the Acorn Squash and relished every bite. This soup was really good and I would happily buy it again and again.
On the side I also had a piece of Jenna’s Oatmeal Bread. Yum!
I thought you guys would find it amusing where Abbie watches me eat lunch everyday.
She gets right up on the table! I push her down, but she always pops back up. The good thing is she never tries to eat my food, even if I get up and walk away. At least she knows the boundaries there.
I could not resist a Dark Chocolate Heart from my Godiva Box.
And in work related news, I am in charge of selecting the colors for our company t-shirts for our conference in Long Beach in April. We are going with a summer beach theme, so I narrowed it down to some pretty summery colors.
Its a big toss up right now which to choose. Everyone has an opinion! I need to pick two, one color shirt for each day that everyone who represents the company will be wearing. What colors do you like the best? I’m leaning towards green and yellow.
