You know those nights when you start out with one idea for dinner and it kind of keeps evolving until you end up with something amazing? Tonight was definitely one of those nights!
I started out with the idea of Stir Fry. I bought a stir fry veggie mix on Sunday and wanted to break into it tonight. Then I received this in the mail and decided I had to incorporate it in to my stir fry.

The nice people at Country Bobs sent me a couple of samples of they’re all purpose sauce. I have seen various reviews around the blog world and knew this stuff was going to be good.
To make my special stir fry cause I combined
- Country Bob’s All Purpose Sauce
- Soy Sauce
- Honey Mustard
- Vinegar
- Sesame Oil
- Ground Ginger
- Garlic Power
- Pepper
I can’t give exact measurements because I kept adding different amounts until I got a taste I enjoyed, but trust me it came out good.

While I was making the sauce I pressed some Tofu and let it marinade in the sauce for 10 minutes. I then baked it at 420 for 15 minutes, flipped it and baked another 20 minutes.

Mmmmm…… baked tofu. Yum!
I started stir frying the veggies with some of the left over sauce, when I realized I meant to have some brown rice to put the stir fry over. Knowing brown rice would take WAY to long to cook now I dug in my cabinet and discovered some No-Yolk Whole Grain Egg Noodles and knew that would be the perfect replacement.

I mixed the Noodles, Veggies, Tofu and Sauce then topped it with Sesame Seeds and Pecans. It was different then my original dinner, but oh so good. I enjoyed this creative creations and would happily make it again.

Yum!
With all the creativity from dinner I had to let it rub off into my dessert too!

I had 1/2 of a Kit Kat Blondie, a dollop of Fat Free Cool Whip, and 4 Strawberries. This dessert was perfect! Absolutely perfect!
I almost for got, this afternoon I had a snack of 100 Calorie Pack of Kettle Corn.

I was about to skip the afternoon snack when my stomach started growling at 4:30 and I knew dinner would still be a couple of hours off. This is a big step from where I would just eat a snack a 3:00 just because it was there. I waited, felt the hunger and then ate.
Now I’m going to enjoy another special treat I received in the mail.

I believe I had both Kath and Sarah to thank for this one. Kath decided to share her BSI winnings with the whole gang so Sarah sent packets of Sleigh Ride Sugar Cookie Tea to the group. I LOVE this tea and am sooo sad its now out of season. Thank you Kath and Sarah!
