OMG, I am exhausted! It has been another long, fun filled day of sking that has left me pooped! It will be an early bed time for me tonight.
This morning I was awake again before 6:30! But I think it is fair to let you know I was also in bed around 8:00, I think my body is still set on Florida time.
My Dad made pancakes for breakfast this morning and I did a Meghann twist to them and topped the silver dollar pancakes with some Fat Free Vanilla Yogurt, Blueberries, Blackberries and Strawberries.
It was so good, I had to go back for more. ๐
This morning we hit the windy slopes of Breckenridge for round two. This time my cousin Jenny and her husband, Andy, both joined us from Colorado Springs.
It was another blistery cold day, but once we got going on the hills it was great.
We stopped midmorning and I snacked on a Iced Gingerbread Clif Bar.
When we stopped for lunch, my Dad made Hot Dogs for the gang, while I went my own direction.
I had a Baked Sweet Potato topped with Black Beans, Cheddar Cheese, & Onions. I also had the last of the roasted Acorn Squash on the side. This lunch was incredible and in my opinion much more filling and satisfying then a hot dog would have been.
I decided to have a couple of Heather Ricotta Chocolate Chip Cookies for dessert.
We spent the rest of the afternoon ripping up the hills, only stopping for a cup of hot tea once.
When we decided to come back in I had a cup of Peanut Butter Puffins with the rest of the Vanilla Non-Fat Yogurt from breakfast.
This was the Vanilla Chai Rachel Yogurt and I have to say I was not that big of a fan. I’m not sure if it was the altitude, but it was very soupy and liquidy. I don’t think I will be buying this brand again.
Since my Cousin and her husband were only in town for the night, we decided to go for a night out on the town with them.
My Parents and I all dressed up ready to walk around town.
I wore my under armor long johns under my pants…. it made for a very interesting tight fit, but atleast it kept my legs warm ๐
We ended up at a cute little restaurant called The MotherLoaded Tavern on Main Street. I like their slogan “You Momma’s food with a healthy twist.”
I started out with a local microbrew called Avalanche.
It was a pretty good beer.
The table ready to chow down.
I started with a Side House Salad with Chipotle Caesar Dressing on the side.
Apparently this place is famous for their dressing and I have to say it was good, but wow was it spicy!
For the main meal I ordered a bowl of the Vegetable Soup.
This was very good with lots of large chunks of vegetables, but again very spicy. This meal definitely warmed me up!
On the way back it started snowing!
After dinner we warmed up in the hot tub and then I cooled down with a shot glass size serving of the Peanut Butter Cup Ice Cream.
My Twin Bro is coming in late tonight and tomorrow I have a meet up with some local readers (!) and of course there will be more sking in my forecast!
Alright, I’m ready to call it a night. Sweet dreams blog world!
what an awesome day! good to know about that Rachel yogurt, it’s always so ridiculously expensive and I was wondering if it was worth it!
love the shot of icecream! I am jealous of your skiing! I love to ski enjoy your time with the mountain and nice eats! Way to stay healthy on a vacay!
Haha, love the name of the tavern. How’s the gingerbread Clif? I’ve only tried the pumpkin pie and didn’t really like it.
Also too bad you didn’t like Rachels, thats my fave flavor! I like the soupy bit because it is great for dipping dried fruit or apple slices in it! and the creamy topping yummm! you should give it another go!
it sounds like you are having an awesome vacayyyyyyy!
Wow, what a FUN vacation with so many good eats. It looks so awesome that I was momentarily jealous that you had snow…until I realized that I have some already!
Cute ice cream shot glass!
The pancakes look amazing! ๐
Looks like a fun time! That soup looks especially good. I’m sure it helped to warm up after being out in that snow!
I should go to that restaurant, since I love all things spicy! And your shot glass dessert was cute…reminds me of those mini-desserts at Applebee’s, except those are probably a lot bigger even for a “shot” dessert.
Hope you’re having a great vaca! You deserve it.
What an awesome day…looks like a blast! Sometimes ice cream really is the best choice for a shot glass! Hope tomorrow is just as fun for you!
I love the shot glass dessert and love your lunch idea!

The pancakes look delicious and I love the yogurt on top! I think Rachel’s is a little soupy, especially when you’re used to eating thicker greek yogurts.

loving all the fun recaps, and I am not a big fan of Rachels yogurt either!
I love places that brew their own beer – while I love to try all different kinds, my husband always orders a Miller Lite!

Your trip just looks like TOO much fun!
Those pancakes look AMAZING!
Wowww! Sounds like an amazing time! It must feel so good to spend the whole day active in the cold outside and then come inside to warm coziness ๐
No worries about the bake sale announcement…enjoy yourself and get to it when you can, of course! I’m not in any particular rush to post my baked good choice.
Looks like a blast!
Too bad you have to be so strict on your diet though, and cannot engage in a little fun on your vacay!
What beautiful pictures you have from your vacation! Enjoy your time there and stay warm!
That lunch looks great! I tried baking my sweet potato in the oven the other day and it was still hard after an hour! You’ll have to share your trick – I typically just use the microwave.
Can’t wait for the meet up tonight!

The vacay looks like so much fun and I’m so jealous you got to meet up w Jenn and Andy. Tell the fam I said hi!!
It looks like you’re having tons of fun! I’m so jealous of your pancakes! My cereal this morning was pretty good, but for serious, in a competition between cereal and pancakes, I think pancakes always win!
i got so jealous of your ski trip, my bf and i decided to head off to vermont this weekend. WOOOOHOOOO!!!
I absolutely LOVE your blog–Not sure what makes it stand out from others–maybe all of the great photos you post of the things you eat ๐ I just found a peppermint stick Luna bar at Walmart, so I’m going to try it later this week–never tried a Luna bar before. I’m excited! Have fun skiing!!!
