Today has been crazy at work. I was in non-stop meetings and had projects of my own to work on in between. We have an important meeting to prepare for the week I return from Colorado, so I am trying to get all of the stuff I need for that done before I leave.
I am sorry about the lack of lunch updates and e-mail responses, but hopefully my week will calm down soon. I am ready for vacation!
I really despise not having a camera.
Luckily Caitlin is letting me borrow her old camera until I get mine fixed. I am picking it from her tomorrow, so bare with me until then!
Between meetings this morning I thankfully had time for a quick snack. I don’t know what it is about meetings that make me so hungry? I did enjoy a Pumpkin Pie Kashi Granola Bar… sooooo good!.
Lunch was one of those fun hodge podge combinations that involves all of the different foods I was dreaming about at work. Again my photos are courtesy of PhotoBooth. Which, Melissa, is the web camera photo program on Macs.

I toasted an Arnolds Thin, coated the two halves with Cashew Butter and topped with Apple Slices. On the side I had the remaining Apple Slices, Broccoli, and 3 squares of Jalepeno Cheese.
Sounds like an odd combination, but I really enjoyed it. Would you believe me if I told you the jalepeno cheese went great on the cashew butter/ apple combo? Trust me it did!
Again, more meetings, more projects and more documents I had to piece together in the afternoon. Before my 4:00 meeting (which lasted until 5:45 :-/ ) I had a serving size of Harvest Whole Wheat Crackers.
I had plans on taking Blue a for spin after work, but since the meeting ran so long I didn’t have time. Bummer.
I got home starving and seriously spent the whole last half of my meeting dreaming about dinner. Ideas flew through my head on how I could use up my veggies before I fly out this weekend and I came up with a simple veggie salad to go a long with another thing that was on my mind… a Flat Out Calzone!

I cooked up a Turkey Italian Sausage and added some Marinara Sauce. I covered half of a Flat Out Spinach wrap with the saucy mixture and topped with about a 1/4 cup of Mozzarella Cheese. I then folded it over like a Calzone and baked at 350 for 5 minutes. It was great!

On the side I shredded some Carrot and Zucchini, which I mixed with Tomato, Green Onion, Garlic Salt, Oregano, Thyme, Balsalmic Vinegar, & EVOO. It was a very flavorful, unique veggie salad.
Then of course for dessert I had a small Brownie and a bite sized Chocolate Chip Ricotta Cookie. Yum!
Keep up the great work Ladies (and Gentlemen)! We are now up to a total of $1,125.96 for the Leukemia & Lymphoma Society!! WOO HOO!!

jalapeno cheese + apple + cashew butter…. its one of those things that sounds really gross but tastes amazing! at least thats what i’m guessing… I am still trying to find those flat-out things, i haven’t seen them in grocer stores near me – yet. Oh, and I need to shoot you an e-mail if its not too late to update my items for the bake sale.

I bought those Harvest Whole Wheat crackers one week because Brent always eats Triscuits with his lunch, but those were on sale. He flipped for them and claimed they’re infinitely better than Triscuits and he can never go back. So funny. Meanwhile, everytime I ask how dinner is, the answer is “fine.”
