Cold Night, Hot Meal

When the weather gets cold outside all I want is a nice HOT meal to keep me warm. Tonight I was all about a hot sandwich and a nice big bowl of soup. The meal warmed me to the core, which is good because tonight’s lows are in the low 30s.. brrr…

The soup was this great can of Amy’s Low Sodium Chunky Tomato Bisque.

I picked this can up on sale at Whole Foods this Saturday (2 for $4.00.. woo hoo!) and really wanted to give it a try. The soup was nice and chunky but just a tad sweet for my taste.

The soup was perfect for dipping the great sandwich I made to go along side it.

The George Foreman did a great job of grilling my fancy Grilled Cheese.

I can never just have a plain grilled cheese so of course I had to kick it up a notch. Between the two slices of Whole Wheat bread I had Reduced Fat Cabot Pepper Jack Cheese, Sweet Potato and Spinach. It was great!

This dinner was the perfect cold weather meal. It was wonderfully flavorful and took the chill out of the air.

With a great dinner I also had a great dessert. I had 1/3 of this fabulous Dark Chocolate Bar.

You can never really go wrong with chocolate. :)

TIme to unwind in front of the tv, I’m a big nerd who DVRs Lifetime movies and I’m watching a cute one now called “7 Things to Do Before I’m 30″ Who doesn’t love a good soppy Lifetime movie?

Similar, but Better

Today’s lunch was very similar to the one I ate on Tuesday.

It had Yellow Squash and Cucumber with a tablespoon of Hummus

And a nice juicy Baby Pickle on the side

But what makes this lunch better then the other is that inside the delicious Flat Out Spinach Wrap is a nice heaping helping of last night’s ‘Cheesy’ Chickpea Cauliflower Casserole.

The left overs totally made that wrap! The left over casserole took to the role of wrap filling rather nicely and made my lunch very enjoyable. If you made this dish and have left overs I highly suggest rolling it into a wrap the next day. Yum!

Midmorning I brought out a Pistachio Larabar to snack on.

Though I have enjoyed the pistachio flavor in the past, this one was a bit meh to me and I ate half before discarding the rest. Oh well.

Has anyone else been paying attention to the Peanut Butter Salmonella scare out there? Apparently they traced the salmonella back to King Nut which is a manufacturer whom mainly sells their PB in bulk to schools and other organizations. So, all of our precious Peanut Butters are safe.

However, I read today that Kellogs is recalling all of their Peanut Butter crackers until an investigation is complete in their peanut factories. So you may want to hold off on munching down on any Kellog crackers – which includes Austin and Keeblers  Brands – just to be on the safe side. :)
