Camera #5

by Meghann on January 13, 2009

I present to you camera #5 in an 11 month period.

It’s currently charging and I can’t wait to take photos with it tomorrow morning!

Unfortunately Geek Squad informed me today that my previous camera’s warrenty did not transfer to the recent one, therefore they would not be able to fix it. I was bummed and very melodramatic, but Caitlin assured me she would replace the one she dropped, so I went out and bought the most reasonably priced camera Best Buy had. Now here’s crossing our fingers that this is the only camera of 2009.

Luckily the camera was the only tragedy of the day, the rest was busy and uneventful.

At work I enjoyed a Kashi Blackberry Graham Bar.

The other day Shelby from La Belle Vegan made some yummy looking Chickpea Gravy from Vegan with a Vengeance. She graciously e-mailed me the recipe and I made it for dinner tonight. It was wonderfully easy and of course I made some slight changes and may have.. you know.. unveganized the recipe by using Pepper Jack Cheese instead of nutritional yeast... ooppss…. It was still very good and if you would like the recipe send me an e-mail. :)

With the Chickpea Gravy I also had some Steamed Spinach and oven roasted Boniato.

I discovered the Boniato at Publix this weekend. After some google research I discovered a Boniato is a White Sweet Potato and has the same taste and nutritional values as a regular Sweet Potato.

The oven roasted Boniato came out really good. It’s a little drier then the regular sweet potato so it crisped up a little more and was not quite as sweet. I would love to buy more of these in the future, apparently they’re available year around in Florida, who knew?

Dessert was amazing. I forgot about much I truly love how resourceful Ricotta is, I made sure to utilize it in my dessert tonight.

I had 3 tablespoons of Ricotta Cheese, a drizzle of Honey, Mini Chocolate Chips, and 2 Strawberries. It was soooo good. Yum! All it was missing was some nice crunch from graham cracker, that would have put it over the top. :)

TIme to go bundle up! It’s suppose to get in freezing temps tonight and the highs tomorrow are in the 50s, that’s about as cold as it gets in good ole Central Florida. I’m thinking tomorrow might be a good time to indulge in an indoor work out, we’ll see.

Good Night Everyone!

Mac to the Rescue

by Meghann on January 13, 2009

I had an hour long 11:00 meeting today that had me bolting for lunch as soon as I got back to my desk. In the bolting, I accidentally left my camera on top of my desk where it was safe and sound buried under a stackful of papers.

I believe this is when having a camera phone would come in handy, unfortunately I am cheap and am without one. So option B was the only other camera device I could think of in my apartment to document food… my MacBook. :)

That’s right, for the first time since I got my Mac I used the PhotoBooth feature.

Of course Abbie and I had to play with it at first.

haha.. gotta love it. :)

So back to the story of my lunch, it was actually a REALLY good lunch today!

I had a plate of mish mosh that was just too delish for words, so let me show you all of the yumminess.

The star of my lunch was my wrap. I tried the Spinach Flat Out Wrap for the first time and filled it with 1/2 of a baked Sweet Potato, Goat Cheese and Banana Peppers. I really enjoyed the spinach flavor wrap and of course goat cheese makes any wrap amazing, especially since I heated it up in the microwave for 30 secs until it was all warm and gooey.

With the wrap I had some Sabra Hummus with Cucumber, Yellow Squash and 2 baby Dill Pickles.

And this Tangerine. (I bought a whole bag of these so don’t be surprised to see one with every lunch this week)

The one picture I did get on my regular camera was my snack of Pumpkin Seeds and Almonds.

I’ve discovered I am really not one for salty snacks. This snack was ok, but nothing to write home about.

Thank you for all the bike advice! I’m going to take your advice and wait to make any decisions until I go to the bike shop this weekend and have a look at what they have and listen to their answers for my questions.

Lunch time is over, time to get back to work. And just for curiosity’s sake… am I the only one out there who does not have a camera phone?
