Perfectly Portioned Taco Lasagna

It has been a while since I have done a Perfectly Portioned for One Meal, so I made sure to have one on the menu tonight. This was a quick and easy Mexican dish that has been brewing in my head all day. I have to say it came out just as great as I was expecting.

Perfectly Portioned Taco Lasagna

  • 3/4 cup Black Beans
  • 1/4 cup Brown Rice
  • 1/4 cup Pineapple Chunks
  • 1/8 shredded Reduced Fat Pepper Jack Cheese
  • Onion
  • Buffalo Sauce
  • S&P
  • 3 Small Corn Tortillas
  • Salsa
  • Spinach

Mix all of the ingredients above the corn tortillas together in a bowl. Layer the corn tortillas with the black bean mixture. Bake the lasagna in the over at 375 for 10 minutes. Serve on a bed of spinach topped with salsa.

Not only is this meal perfect for one, but its vegetarian to boot! Yum!

For dessert I had a small bowl of my famous Peanut Butter Cup Frozen Yogurt with Pom Seeds.

Yum! I’m bookmarking this! No cheese and no buffalo sauce (if there’s worsterchire sauce in it) and it’s vegan too! You come up with the best stuff!

I love Mexican food, so that looks perfect to me. :)

I’m watching Gossip Girl, but I’ve never really been into it. I am not going to say it’s because I’m too old! I will be watching The City later tonight to make myself feel like I’m not almost 30. :) Have a great night!

I wam watching Gossip Girl right now!!!! love itttttttttt

I have a question about running.. last summer I was like a running machine and able to run a solid 4 miles at a 9 min mile pace .. then i kind of took off rom running and trying to get back in it .. and after 1.5 miles i want to just give up and i feel like i cant go anymre.. and i even tried slowing up the pace and i can only do 2.5 and ive been trying to imporove for over a month now and no change.. Its making not enjoy running like a used to .. how can i get out of this rut?

Question – You know what they say.. just take it slow and easy until you get the hang of it. It took me MONTHS to build up the stamina to run as far as I do and I’m sure your body is jsut getting used to it again. What you can try is cross trining. Bike, rollarblade, swim, anything to build your cardio power back up!
