It has been a while since I have done a Perfectly Portioned for One Meal, so I made sure to have one on the menu tonight. This was a quick and easy Mexican dish that has been brewing in my head all day. I have to say it came out just as great as I was expecting.

Perfectly Portioned Taco Lasagna
- 3/4 cup Black Beans
- 1/4 cup Brown Rice
- 1/4 cup Pineapple Chunks
- 1/8 shredded Reduced Fat Pepper Jack Cheese
- Onion
- Buffalo Sauce
- S&P
- 3 Small Corn Tortillas
- Salsa
- Spinach
Mix all of the ingredients above the corn tortillas together in a bowl. Layer the corn tortillas with the black bean mixture. Bake the lasagna in the over at 375 for 10 minutes. Serve on a bed of spinach topped with salsa.

Not only is this meal perfect for one, but its vegetarian to boot! Yum!
For dessert I had a small bowl of my famous Peanut Butter Cup Frozen Yogurt with Pom Seeds.

Earlier this afternoon I had a snack of Almonds.

Must….. Stay….. Awake….
I have never had such a hard time getting motivated at work. I have plenty of stuff to do, but my brain is wired to exhaustion mode. I have definitely been dragging this morning. It’s as times such as these that I really wish I liked coffee I would be drinking buckets of it.
My snack was really no help in keeping me awake either.
I had a big handful of Cherries.
Lunch was the other half of my Publix Sub from yesterday and some fresh broccoli.
If you ever need something healthy to instantly fill you up, try fresh broccoli. It’s full of fiber and instantly fills your belly right up. I feel stuffed right now.
I know I complained about it yesterday, but my Mom’s camera is just not the best food blogging camera. It won’t focus on close up shots of food, it gave me blurry distant shots at Caitlin’s wedding and it’s big and clunky and I just really, really, really miss my camera.
I don’t mean to complain, the whole situation is just leaving me very upset.
I hope to have my beloved camera returned to me in a couple of weeks, but until then I can not apologize enough for my lack luster photos. Hopefully I can talk someone else into letting me temporarily borrow their camera. Of course, with my luck with cameras in the past I understand how hesitant they are to hand theirs over.
Is anyone else as accident prone with cameras such as myself?
