Today has been a nice change of pace from the week I just had and the week I have ahead. I am currently vegging on Caitlin’s couch where we just watched the entire Harry Potter 5 movie in HD on her new AMAZING tv and are now preparing for a night out at the wine bar. It’s nice and refreshing not to be in any sort of a rush.
Rewinding back to earlier today I met Caitlin and fellow blogger, Kathryn, for a bike ride at J Blanchard Park.

Again we took advantage of their free bike rentals. We took our time and did a nice, easy 9 miles on the bike. RIding bikes s really a great way to get to know people. The three of us chatted the entire ride and really got to know Kathryn. She’s just as sweet as every other blogger I have met. I have made another great friend in the Orlando area through the blogging world and can not wait to get together again.

Before the bike ride I snacked on a tangerine, which of course did not hold me over at all on the ride. My stomach was growling the entire ride.

After the ride Caitlin and I said good bye to Kathryn and went to one of my favorite places, Designer Greens, for a late lunch.

I ordered a full salad of Mix Greens, Avocado, Tomato, Gala Apple, Mushrooms, Goat Cheese & Herb Dusted Chicken.

I had the Feta – Vinaigrette Dressing on the side for fork dipping.

Even though I cleaned my bowl, I was pretty hungry only an hour later. I blame the missing carbs! So I had a piece of toast with half Cashew Butter & half Raspberry Jam. It filled the void temporarily.

This is the point in the day when we lounged on the couch and watched Harry Potter
Dinner was a collaborative effort of both Caitlin and myself. Basically we just pulled everything from the fridge and mushed it together to make bean burgers

For the Bean Burger we combined:
- Black Beans
- Left Over Turkey
- Worcestershire Sauce
- Sweet Potato
- Red Onion
- Whole Wheat Flour

We combined everything and made two patties we seared on the stove top. They came out really, really well. I loved the addition of turkey to the bean burger.
We also had Butternut Squash Fries with kethchup on the side.

And a little Plum Tomato to round out the plate.

To tame my sweet tooth after dinner I had a couple Dove Dark Chocolate covered Almonds. Yum!

Now we’re preparing for an impromptu Bachelorette Party for the future Mrs. Future Husband.
We even got Caitlin in a nifty veil to hopefully attract some free drinks our way

It’s Caitlin’s last weekend of freedom so we’re going to go all out! Don’t wait up!

I just made my husband sweet potato fries for the first time and he loved them. Hopefully the veil will get everyone some free drinks tonight – have fun!
