Holiday Burger

I broke down after work today and ran to Borders to buy the fourth Twilight book (Target was sold out). I co uld not even go a full twenty fours before diving into the next book! :) I have to make this post quick so I can get back to reading!!

This afternoon I had an AMAZING snack of Cranberry Sauce and Pineapple.

It sounds odd, but it worked. Yum!

Dinner was a creation I’ve been dying to make all week, I’m so glad to have all of my groceries back so I could finally make it.

A couple of weeks ago reader, Natalie, asked me if I had any idea for ground turkey. So I put my creativity hat on and brainstormed what would be a good signature ground turkey item. Then I thought what pairs better with Turkey then Cranberry Sauce? I present you with Holiday Turkey Burger.

This one was so easy theres really no recipe to it. I just combined 1/4 pound of ground turkey with a generous amount of cranberry sauce and onion then formed a patty and put it on the George Foreman. It was the perfect balance of sweet and savory.

I topped the burger with some spinach and part skim ricotta cheese.

On the side I had a small serving of mixed veggies and some yummy rutabaga fries with ketchup.

I’m still loving the rutabaga. :)

I have an office Holiday Lunch tomorrow so I baked up some of Heather’s Egg Nog Oaties for the festivities.

Her recipe was very easy to follow with very few ingredients. I even pounded two candy canes and added that to the mix for a peppermint touch.

I tested one of the cookies right out of the oven as well as some of Melissa’s Peppermint Bark since I was really craving chocolate.

The cookies were great! So light and fluffy, I wonder if that’s from the egg nog?!?! Bravo Heather on the easy, delicious cookies!

Alright, time to get back to my book!

How I Became a Blogger

My lunch today included mostly refrigerator items. :)

I finally got all of my fresh veggies back in my fridge at home. I missed having so many fresh items. I always take for granted all of the zillion of things I store in my fridge. Never again will I make that mistake. :)

My HUMONGOUS salad contained:

  • Spinach
  • Tomato
  • Mushrooms
  • Feta Cheese
  • Black Beans
  • Corn
  • Pumpkin Seeds
  • Salsa

It was sooo good and very refreshing from the heated up left overs I have been surviving off of.

With my salad I also had my last VeggieGirl Pistachio-Pear-Ginger Blondie.

It was just as great as my previous ones. Thank you again VeggieGirl for the wonderful treats. :)

Before a very long meeting I had this morning I snacked on the last of my bag of Pumpkin Spice Trail Mix.

There was a little more then a 1/4 cup left, but it was mostly raisins and I usually avoid the raisins so I ended up having less then a 1/4 cup total. It wasn’t very filling which explains the gigantic salad I had for lunch. :)

I see quite a few of you clicked through to my old blog yesterday. I have never seen a more clicked on link on here before. It was a little surreal. A couple of you were asking why I stuck with blogging this time and I think it has more to do with the love of the community I feel now. You guys are awesome.

Caitlin and Jenna were truly the ones who encouraged me to start this blog way back after I first met them face to face in September. I had been a lurker, so when I moved down to Orlando I was brave enough to strike up a meet up with Caitlin and our friendship grew from there. I met Jenna a week later. I never told them about my previous blogging attempt, so when Jenna suggested I created my own the idea started brewing inside of me again.

When I started before I was still very new reading food blogs and was not sure what made a great food. This time around I had been reading them for months and knew what could make or break a blog. So I threw some ideas in my head and combined all of the aspects I liked from other blogs and made one of my own. It helped having Caitlin and Jenna as friends so I knew I had at least two readers and it kind of grew from there.

I’m still amazed how many hits I get on here a day and how many wonderful readers I have. Thanks to my blog I have also discovered new blogs with some truly inspiring stories. I have also met a ton of great people, both in the blog world and in real life.

I am so happy I stuck with blogging this time around and it truly is thanks to you guys!
