Perfectly Portioned Burger

by Meghann on December 11, 2008

Bean Burger that is! ๐Ÿ™‚

A vegetarian co-worker of mine told me about his family was split half and half with of both meat eaters and veggie lovers. When they grill out the grill is split into two sides, one with regular burgers and the other with Boca Burgers. I asked him if he ever makes his own bean burgers in place of the Boca and – gasp! – he never had! They’re so easy and 10 times better then Boca burgers! I figure if it’s a special enough occasion to call for burgers on the grill then its special enough to make a homemade bean version to go on it.

Vegetarian co-worker this recipe is for you. Hopefully one day you will cross the line and try your hands at creating your own Bean Burger. ๐Ÿ™‚

I just happened to end up with one burger when I created it tonight, so I thought it would be the perfect item to add to my Perfectly Portioned for One meal list. ๐Ÿ™‚

Back Bean Squash Burger for One

  • 1/2 cup + 2 tblsp Black Beans
  • 1/4 cup Defrosted Frozen Squash
  • 1/4 cup Whole Wheat Bread Crumbs
  • 2 tblsp Crnr
  • Chili Powder
  • Pepper
  • Salt
  1. In a food processor combine the 1/2 cup of Black Beans & squash until blended.
  2. Take the mix out of the food processor and add the rest of the ingredients mix until you can from a patty
  3. Place the bean patty under the broiler on high and cook for 5 minutes on each side

I sandwiched the Bean Burger between two pieces of whole wheat toast and topped it with Buffalo Sauce, Spinach and Tomato.

On the side I had some Sweet Potato Fries

and some steamed Green Beans for something green.

I had every intention of making my BSI for the week, but was too wrapped up in my book that I decided to try it on Saturday instead. So still in the spirit of this week’s BSI of Peppermint I had some lovely Peppermint Ice Cream.

I feel like its been forever since I have had this amazing treat! Oh how I’ve miss thee! Ryan tells me I should try Egg Nog, which she claims is equally as good. I have every intention of picking some up this week and challenging her claim. ๐Ÿ™‚

I didn’t have a chance to eat my Popcorn in the movies last night so I popped a 100 calorie bag of Kettle Popcorn for my snack this afternoon.

Well you would think my lap top woes would be over, now that I have my amazing Mac; unfortunately I think I may have just passed them along to my Mom. (Sorry Mom!) She called me last night to inform me a mysterious line had formed across the screen of her laptop, which is also a Hp! Poor Mommy! Her warranty expired in August and the people at HP have been as much help to her as they were to me. Luckily the line is just on the screen so it does not effect the rest of the operating system. It is just large enough to annoy the crap out of my Mom though. My point to this story is…. DON’T BUY AN HP PEOPLE! I just had to get that out there one last time. ๐Ÿ™‚ Hopefully the line will disappear just as mysteriously as it formed, we will just have to wait and see.

This sounds delicious! I am not a vegetarian but I prefer vegetables to meat so I am definitely going to try these next time I grill. Sounds like such a healthy, delish meal!

Your bean burger looks amazing! YUM!

8 Justy2003 December 11, 2008 at 9:15 pm

Those sweet potato fries look perfect! I may need to try cutting mine into rounds next time…when I cut them into fry shapes they tend to get a little burnt…

Yummy burger. And I love the tribute to the BSI. Can’t wait to see what you come up with!

And it’s vegan to boot! I would never have thought of using squash. Yum ๐Ÿ™‚

My mom had a bunch of problems with various PCs but since she got her own mac in Sept she’s been problem free.

I’ll send you some yoga links tonight, I have to find them on my home computer (I’m @ work now).

I looooove homemade bean burgers – they are so good when you make them from scratch.

You seriously don’t know how much I appreciate your “perfectly portioned meals for one” list…I have a feeling I will be using it a lot next semester in my new apartment ๐Ÿ™‚

What a great dinner! Looks delicious!

16 Sarah December 11, 2008 at 10:07 pm

My sister and I both have an HP and they both stopped working, I did a little online research and found out that there was a recall on select models. I sent the broken computer in and they sent it back working! I would recommend looking into the recall and see if your computer was included (I have an hp pavillion 2000). Just to let you know!

17 biz319 December 11, 2008 at 10:21 pm

That looks WAY better than a boca burger!

18 Melissa S. December 11, 2008 at 11:40 pm

i really need to try that bean burger…being a veggie and all! hah!

sorry about your mommy’s puter issues!

19 Sharon December 11, 2008 at 11:59 pm

Wow, that looks so delicious! Great dinner!

20 Ryan December 12, 2008 at 12:43 am

Ooo I like the way you made your sweet potato fries and your burger looks delicious! Can’t wait for you to try that ice cream!

21 Elina December 12, 2008 at 8:22 am

I’ve never had veggie burgers because they always have onions (which I hate). I’m definitely making this recipe!! Can’t wait!

I had an HP too (until switching to a Mac last month) and I will never buy an HP ever again!!! Totally agree with you. Those things are crap!

22 Melissa (MISSY MAINTAINS) December 12, 2008 at 11:12 am

I agree on the HP! I bought one about 6 months ago and am having such issues with it! Never again!! Now I have to check which model I have to see if it was recalled! Any advice on how to sell it?

23 Meghann December 12, 2008 at 11:32 am

I checked my model and it wasn’t one of the lucky recalled ones. I still have not tried to sell it. I am Ebay challenged so I am going to hand it off to my cousin so he can work his magic. ๐Ÿ™‚
