Perfectly Portioned Burger

Bean Burger that is! :)

A vegetarian co-worker of mine told me about his family was split half and half with of both meat eaters and veggie lovers. When they grill out the grill is split into two sides, one with regular burgers and the other with Boca Burgers. I asked him if he ever makes his own bean burgers in place of the Boca and – gasp! – he never had! They’re so easy and 10 times better then Boca burgers! I figure if it’s a special enough occasion to call for burgers on the grill then its special enough to make a homemade bean version to go on it.

Vegetarian co-worker this recipe is for you. Hopefully one day you will cross the line and try your hands at creating your own Bean Burger. :)

I just happened to end up with one burger when I created it tonight, so I thought it would be the perfect item to add to my Perfectly Portioned for One meal list. :)

Back Bean Squash Burger for One

  • 1/2 cup + 2 tblsp Black Beans
  • 1/4 cup Defrosted Frozen Squash
  • 1/4 cup Whole Wheat Bread Crumbs
  • 2 tblsp Crnr
  • Chili Powder
  • Pepper
  • Salt
  1. In a food processor combine the 1/2 cup of Black Beans & squash until blended.
  2. Take the mix out of the food processor and add the rest of the ingredients mix until you can from a patty
  3. Place the bean patty under the broiler on high and cook for 5 minutes on each side

I sandwiched the Bean Burger between two pieces of whole wheat toast and topped it with Buffalo Sauce, Spinach and Tomato.

On the side I had some Sweet Potato Fries

and some steamed Green Beans for something green.

I had every intention of making my BSI for the week, but was too wrapped up in my book that I decided to try it on Saturday instead. So still in the spirit of this week’s BSI of Peppermint I had some lovely Peppermint Ice Cream.

I feel like its been forever since I have had this amazing treat! Oh how I’ve miss thee! Ryan tells me I should try Egg Nog, which she claims is equally as good. I have every intention of picking some up this week and challenging her claim. :)

I didn’t have a chance to eat my Popcorn in the movies last night so I popped a 100 calorie bag of Kettle Popcorn for my snack this afternoon.

Well you would think my lap top woes would be over, now that I have my amazing Mac; unfortunately I think I may have just passed them along to my Mom. (Sorry Mom!) She called me last night to inform me a mysterious line had formed across the screen of her laptop, which is also a Hp! Poor Mommy! Her warranty expired in August and the people at HP have been as much help to her as they were to me. Luckily the line is just on the screen so it does not effect the rest of the operating system. It is just large enough to annoy the crap out of my Mom though. My point to this story is…. DON’T BUY AN HP PEOPLE! I just had to get that out there one last time. :) Hopefully the line will disappear just as mysteriously as it formed, we will just have to wait and see.

Left Over Lunch

The worst thing about having such a time constraint lunch is my lack of abilities to be creative in the short period I have. On my way home all of these great possibilities came to my head of fun new ways to spice up the left overs I had waiting for me. Unfortunately all of my fun and creative ways would end up requiring a lot of time and effort I was not able to spare. Bummer.

My left overs were still great even if I did not have the time to make them as fancy as they would have been. :)

I had the left over Spaghetti Squash Pancakes, topped with Black Beans, Fat Free Cheddar Cheese,  Salsa & Non-Fat Plain Yogurt.

It was basically the same meal I had Tuesday night, with the addition of Black Beans. That extra bit of extra protein kick it up a notch, right?  :)

For my midmorning snack I had a Peanut Butter Z-Bar

I eat these every day, you just don’t usually see me doing so. I’ve mentioned it before, but I always have half of a z-bar before I run every morning. I find that’s the best way to hold my hunger over and give me enough fuel to make it until breakfast.

Since I eat them before I run, I usually don’t even think of them as a snack option. However, I felt like a change of pace today and grabbed one on the way out the door. It’s funny after I was done eating it I had the sudden urge to go running. I guess I have trained my body to react that way to the bars…lol

Do you have any foods that trigger certain things in you head? Or do you have certain activities that have you craving certain food? I know a big one that sticks out for me is Guitar Hero. Back when Guitar Hero first came out I was stuck in Gainesville with my brother and we spent seriously 6 hours straight playing Guitar Hero. At one point we took a break and went to The Ale House and got BBQ CHicken Nachos (sooo good ) so now every time I play Guitar Hero I have an odd craving for BBQ Chicken Nachos…lol
