Early Christmas

I am always excited when I check my mail box and there’s a little key inside waiting for me. That little key gives me access to a larger mail box that holds packages too large to fit in my little cubby. So Little Key = Big Package = Excited Meghann! When I saw the key waiting for me last night I was very excited to see not one but two packages in the larger box.


It was as if Christmas morning came early.

Inside the smaller one was a package I have been dying for, my second Twilight book had finally come in.


I started reading immediately and only took a short break to make dinner and watch Gossip Girl last night. (Speaking of Gossip Girl, OMG!) Now I need to start my hunt for the third book. :)

In the larger box was a dear gift from VeggieGirl.


I sent her some Mini Larabars last week and in return she sent me some of her scrumptious Pistachio Pear Ginger Blondies (that’s a mouthful!). She is so sweet for sending me some of her famous baked goods, I feel guilty that I did not send her enough mini Larabars to equal this wonderful gift.

I must sat VeggieGirl is a pro at shipping goods. Not only did she put them in cute tins with adorable ribbon, but each Blondie was rapped perfectly in parchment paper to make sure they were kept nice and fresh.


I wanted to try one right when I opened the gift, but I waited until after dinner to enjoy one for dessert.

Before I left the office yesterday afternoon I had a Fruit Leather and some Almonds as my Mid Afternoon snack.

Dinner was a fun creation I thought of at work. I wanted to do a variation of my Pumpkin Pecan Encrusted Chicken so a couple of ideas went through my head. I thought of Pumpkin Sloppy Joes, Pumpkin Chicken Casserole, etc… Finally the idea of Pumpkin Turkey Meatballs came to mind and I knew I had to try it.


Pumpkin Turkey Meat Balls

  • 1/3 lb Ground Turkey
  • ¼ cup Pumpkin
  • 1 Egg White
  • Pumpkin Spice
  • Nutmeg
  • Cinnamon
  • Salt
  • Pepper

Mix all of the ingredients in a bowl and form 6 small meatballs. Bake in the oven at 375 degrees for 25 minutes. (I meant to add crushed pecans to the mix, but forgot until they were in the oven. If I were to make these again I would try to remember the pecans. :) )


I placed three of the meatballs atop some Spaghetti Squash, Wilted Spinach and Marinara Sauce.


It was a great faux spaghetti and meatballs that was delish! The meatballs actually ended up being more savory then sweet and paired perfectly with the spinach and squash. Yum!


The funny part about this dish is I don’t even like the real version of spaghetti and meatballs, I actually despise it. But, for some odd reason the Spaghetti Squash gives the dish some extra flavor that leaves the original version in the dust.

Of course for dessert I dug into one of VeggieGril’s Blondies. See how moist babies stayed in the parchment wrapping?


They were so good! I especially like the pistachio in them! I need to utilize those more often in my own baking, such a yummy versatile nut. THANK YOU VeggieGirl for your lovely thoughtful treat!

This morning I set out for my early run and was very pleased to find it was not freezing. In fact, the high for today is 80 and for tomorrow it’s 83. Maybe this weekend I can hit up the beach or something. Hehehe…Don’t worry I’ll send warm thoughts your way! I’m not sure if It was the weather, but my run was surprisingly quick. I left the house at 6:03 and returned by 6:45 after a 4.83 mile run. I usually take my time running in the mornings so that’s a quick run for me during on a week day.

When I returned I made a fabulous breakfast.


I used the last of the Pecan Praline Granola Melissa had sent me (Thanks Melissa!) which came to about ½ a cup, a ½ cup of Pumpkin Spice Granola, ½ a container of Oikos Honey Yogurt and some Blueberries and BlackBerries.


It was a great breakfast.

When I got to work this morning I was excited to see my favorite IT guy had successfully managed to move all of the files from my old Laptop to my Mac, Yay!! He also told me my old hard drive is still in great condition and I should look for a case of some sort for it so I can connect to my USB and use it as an external Harddrive on my new comp, which sounds great to me! :) And he said I could sell my old lap top on EBay for parts and probably get $100 for it. I figured that’s worth of a try, but if there’s no bites on that end I promise to go Office Space on it.
