Thanksgiving Leftover Breakfast

by Meghann on November 29, 2008

My Twin Brother has been looking for some one to run with since we got home. He was not up for running 11 miles with me on Thursday so I told him I would run a shorter distance with him today. We ran to the end of my parent’s road and back; approximately 3.6 miles.

I felt great on the run and tried to hold back as much as I could to keep at the same pace as my brother. I have to admit I took a little pride in knowing that if we were racing this distance I could kick his butt. Call it brother/ sister rivalry still going strong. Hey, he’s in Med School right now I’ve got to do better where I can. :)

When we returned I got to work on a breakfast I have been dying to try since I started seeing it pop up in the blog world, Pumpkin French Toast!

I mixed some egg white with pumpkin, fat free milk, cinnamon and pumpkin spice. I then used that as a batter for french toast as normal. While it was cooking it smelled just like pumpkin bread, delish!

I topped the Pumpkin Toast with left over cranberry sauce and had a piece of Bacon my Dad cooked up on the side.

It was a great Thanksgiving Leftover Breakfast. :)

A couple of you were requesting more pictures of Scooby and Abbie so I snapped this one of playing tug of war this morning.

CIMG3933

This is they’re favorite game and the two of them can easily rip a toy apart in less then an hour. You would think Scooby would dominate this game, but Abbie can hold her own. In fact she’s usually the one that ends up winning the toy!

Today is a big day in our household! We’re going to spend the day decorating the house for Christmas (we go all out for this holiday) and then its the FSU v UF Football Game. A big deal in our considering my Sister and I went to FSU and my Twin Bro got his undergrad at UF!! All I have to say is GO NOLES!!!!

So fun! I can’t wait to get a Christmas tree (even though we’re only going to get a super tiny one!). The pumpkin french toast looks soooo good! Glad you can kick your bro’s butt- how awesome!

That looks so delicious! I WAY overestimated the amount of cranberry sauce we’d eat, I have so much left over.
