Better to Have Extra Then Not Enough

The last time I had plans to leave for the weekend I ran out of fresh food in the middle of the week. This time I didn’t want to make the same mistake so I made sure my fridge was nice and stocked to get me through to departure time. My problem this time was instead of not having enough veggies, I ended up with too many. Which is actually the problem I prefer to have. I took advantage of my plethora of fresh veggies and made a delicious, eclectic salad that cleaned my fridge right out. :)

In my salad I had

  • Spinach
  • Alfalfa Sprouts
  • Tomato
  • Cucumber
  • Apple
  • Turkey Slices
  • Fat Free Cheddar Cheese
  • Oven Roasted Broccoli
  • Oven Roasted Carrot
  • Oven Roasted Asparagus
  • Buffalo Tofu
  • Tomato Chutney Vinaigrette (homemade with equal parts vinegar, tomato chutney & olive oil)

The salad ended up being humongous and wonderfully filling. It was an interesting mix of cold and hot veggies that I thought was fabulous. The tomato chutney vinaigrette I mixed up gave the salad a nice spice that complimented all of the components perfectly.

I will remember in the future that its always ok to have extra veggies if I know I am going to be away. The extra veggies just gives me an excuse to be inventive and use all of the veggies in a wonderful meal.

Dessert was an easy choice tonight. I realized I had not enjoyed my Peanut Butter Cup Frozen Yogurt in a while so I had 1/2 a cup with a sprinkle of TJ’s Praline Pecan Granola on top.

Speaking of frozen goodness. Has anyone seen Edy’s Slow Churned Pumpkin Ice Cream? I have been searching EVERYWHERE for it, but according to the website no store carry it within 50 miles of me, bummer!! If any Edy people are reading this please start stocking it in Orlando ASAP! Thanks!

Can you tell how much I am dying for Pumpkin Ice Cream? :( I wonder if the Brusters next to my parents has the flavor. I guess I will just have find out this weekend. Maybe I’ll make a pit stop tomorrow. :)

I am so sad that the the end of Thanksgiving means the end of all of the wonderful Pumpkin flavors I have been indulging everywhere at the moment. I have really enjoyed it and sad to see it go. At least I can still enjoy pumpkin creations at home, which is why I enjoyed the last of my Pumpkin Cranberry Bread as my snack this afternoon.

I am thinking about making another version of pumpkin bread for Thanksgiving on Thursday. There are so many great recipes out in the blog world, how can I not try to replicate another one?! :)

Alright I have a lot of packing to do! I am getting different reports from different weather sources on what the temps are going to be this weekend, so I have to be prepared for both freezing and sunny conditions. Isn’t Florida grand? So, my bag is going to be STUFFED for four days away! At least I’m not going too far. :)

Entertain Me

I got so much accomplished on my lunch break today. I picked up some mailing supplies, I folded some laundry, I played with Abbie and I made myself a fabulous filling lunch. It was a great break from sitting at my desk and all that activity made my lunch time fly by. Now I just need the rest of the day to go by just as quickly. :)

This morning when I was counting down the hours until my lunch break I snacked on a 1/4 cup of Pumpkin Spice Trail Mix.

Lunch was fabulous. As always when I had the baked Tofu last night I went ahead and cooked the whole block so I would have a quick and easy protein for lunches. The best thing about Tofu is its versatility in meals. Today I ate the tofu in a Buffalo wrap I assembled.

I used a Flat Out Wrap and filled it with the Tofu, Buffalo Sauce, Cucumber, Tomato, Fat free Cheddar Cheese, Alfalfa Sprouts & Spinach. I pressed the wrap in the George Foreman for a few minutes to make sure it was nice and heated.

On the side I had some leftover Broccoli.

I enjoyed my fruit and yogurt combination so much yesterday, I decided to have it again today. This time I just had the fresh pineapple and a tablespoon of granola.

Yesterday I used the Vanilla Oikos Greek Yogurt and today I used my Chobani Plain Greek Yogurt. I think the vanilla was better yesterday. I need to save the plain yogurt as a topping on savory items, I have gotten so used to it that way, that today I felt like I was eating sour cream and fruit. I still ate it, I just did not enjoy it as much as yesterday.

I guess I should make an effort to get back to work now. I think I need some entertainment though. What can I do to make people comment on my blog and entertain me for the next couple of hours… hmmmm…… I would say contest, but I’m to broke to send anyone anything fun… sorry!…… Thanksgiving plans? But I think that’s been pretty popular on everyone else’s blogs at the moment… I like Caitlin’s random fact… oh wait I got it!Family!!! In the spirit of Thanksgiving let’s talk about Family, I’ll start with mine! Since I have a bajillion cousins, Aunts, & Uncles (Hi Guys!) I will stick with my immediate family. As I said in my previous post this is the first time all 6 of us will be together since June and I can not even begin to remember when the last time we were all together at home, it can’t be since last Christmas.. can it? Anyways, right now my Mom and Dad live about 45 minutes from me on in the outskirts of east Orlando, my little brother is still at home with them, my Sister came home from where she goes to school in Tallahassee, my twin bro is coming home from where he goes to Medical School in Miami, and I am here in Orlando. So where is you immediate family at the moment? Are you guys all getting together for Thanksgiving? Are you at different locations across the state or county? Let me know! It’s fun to hear new details!

Bad Cramp

Today’s run was less then stellar. Out of no where I got this painful side cramp that forced me to walk the last half mile or so. It was torturous. I kept trying to keep running with the cramp, but it was just too painful. I think I started to run about 4 or 5 more »
