Hi Everyone! Thank you so much for your patience as I have been dealing with lap top troubles. Turns out my lap top just over heated yesterday and needed some time to cool off. Its currently working so (crossing fingers) hopefully I’m good to go for now.
Thank you to Caitlin for posting on my behalf last night. I loved reading all of the random facts today.
Despite my lap top troubles I have been busy, busy since I left work yesterday, so let’s recap.
Friday Night
Before I left work I snacked on this lovely mini Cashew Cookie Larabar

While I was freaking out over my laptop last night a friend came over to asess the damage and I made us dinner. I went for something simple and easy so I made a Frittata
I made the Frittata with 1/3 cup of egg whites, 2 whole eggs, asparagus, black beans, corn, onion, cheese and various seasonings. I then topped it with some medium salsa and green onions. It was delish.
On the side I had a small salad with spinach, tomato, cucumber, alfalfa sprouts and mango poppy seed dressing.
It was a great meal.
To help me destress I had a glass of Merlot with dinner. I swear it helped!
My friend and I had every intention of seeing Twilight last night, but every show at the theatre was sold out for the next three hours! We decided to just get Ice Cream and rent a movie instead.
I had a small Hazel Nog soft serve with strawberries.
I was disappointed the strawberries was more sauce then strawberries, but it was still good and I devoured every night.
Saturday Morning
I woke up bright and early this morning thanks to a 7:00am wake up call from my Mom. (Thanks Mom) Since I had plans for an afternoon bike ride I decided to take the morning off from running and make a leisurely breakfast. I have been wanting to try Caitlin’s French Toast a la English Muffins and could not think of a better time then now to give it a whirl.
I dunked 2 halved English Muffins in a egg white, fat free milk, & cinnamon mixture then cooked it on the grill top. It was really chewy and absolutely amazing! I am very much enjoying Caitlin’s French Toast experiments I can’t wait to see what fun concept she comes up with next.
On the side I had a cut up Persimmon.
Thanks to all your suggestions I decided to let it sit and get nice and soft to eat it. It was really great this time around! The perfect breakfast component.
After breakfast I had a hair appointment where I finally got it cut and high lighted for the first time since July!

After the salon I snacked on an Apple and Z-Bar on the way to meet the girls for bike riding.
Saturday Afternoon
I was so excited to meet up with Caitlin, my Sister and reader Jen for a 9 mile bike ride around Blanchard Park. I love how blogging allows me to meet great new people. Jen is a senior at UCF with a great interest in nutrition, it was great getting to know her today and I look forward to more get togethers in the future!
Today Jen introduced us to the free bike rentals the City of Orlando offers at the entrance of the park. I will definitely be taking advantage of this in the future. It was so relaxing to just ride and chit chat with the girls.
Thanks to the nice cool weather I wasn’t even sweaty at the end of the ride. If it were not for some wobbly legs at the end, I would never have known I had even
been riding for an hour and a half.
After the bike ride my Sister and I were starving so we decided to hit up Designer Greens for lunch. I had been dying to go back since my visit last month so I was very excited to try the fresh restaurant once again.
I ordered the half pannini & half salad combo.
The pannini was AMAZING! I was really craving chicken so I went with the Buffalo Chicken Pannini. The inside of the pannini was made up of chicken breast, gorgonzola cheese, tomato and this amazing buffalo sauce.
For the salad I chose the mix spring green mix with candied pecans, strawberries & artichoke hearts. I asked for the honey balsamic vinaigrette on the side.
The lunch was yet again amazing! I joined their frequent diner rewards club and received a $2 off coupon for my next visit. I’m sensing another great lunch from there in the near future.
After lunch I took my sister and her boyfriend to their very visit to Whole Foods. It was love at first sight! I was such a happy match maker!
The Present
Wow that was a forever long post!! I am going to try to attempt to catch up on all of my blog lovelies. I’m still very full from lunch so I might just have a light dinner. Have a great Saturday night everyone!!

Have you tried using a cooling pad for your laptop to keep it from overheating? I use this one (http://catalog.belkin.com/IWCatProductPage.process?Product_Id=472610) and I love it! I got it at Best Buy for about $30.
