Cold Weather Lunch

by Meghann on November 17, 2008

My AMAZING weekend has kept me in such a great mood today. I feel excited to work and am not watching the clock slowly ticking away. Even after discovering an error on my paystub that shorted me over a hundred dollars in earnings, instead of throwing a fit, I just casually mentioned it to the payroll department to have it fixed. I smiled the entire time. I need to get away with my girlfriends more often; it makes the work week seem so much more enjoyable. Let’s see how long this feeling lasts. J

I stopped for a break during midmorning to snack on the Brazil Nuts and Bunny Grahams.

I have yet to go to the grocery store since my return, so my fridge is still at the bare minimum of food, so I decided to dig into the freezer for my lunch today. Right on top was my Split Pea Soup I had made last week. With the chilly weather outside, I knew this would be the perfect time to enjoy this heated up treat.

The soup was really thick, but still very good. I tried to thin it out by adding water as I was reheating it, but failed to get it right. Oh well, I like it thick anyways, I was just trying to make it soupier for aesthetic purposes. 🙂

With my soup I had a piece of Toast with a slice of Fat Free Swiss Cheese melted on top.

A perfect cold weather lunch.

After work I am heading straight to the grocery store to pick up some real food. My fridge is just so pathetically empty at the moment, it needs some filling to cheer it up. J

Oh and before I forget… a few of you were asking about my No Butter request of my Mellow Mushroom Pizza. I learned to ask for my pizza like that after reading up on Mellow Mushroom on a local Vegan Forum. On the Forum they were discussing how Vegan friendly Mellow Mushroom was as long you made sure to request for the pizza to be butter and cheese free. Now, I am not a vegan in any means, but I am also not a butter fan so I just adapted that rule. Trust me, you will not taste a difference and I have yet to have anyone bat an eye when i requested the pizza in that manner. I hope this helps! 🙂
