After an incredibly fantastic weekend, I have finally made it back home. The four hour drive went quickly thanks to my hour or so nap in the passengers seat. Thank god for my sister’s boyfriend! I would have definitely fallen asleep at the wheel if I were by myself.
My stomach was still pretty satisfied when we started the trip. Around the half way point I broke into my snack bag and pulled put a Pumpkin Spice Granola Bar to hold me over the rest of the way.
I made it to my parents house in time for an early dinner to celebrate my Little Brother’s birthday. I can not believe he will be 19 tomorrow! I remember when he was born! Since it was his birthday, he got to pick where we ate and he choose a local Cuban restaurant called El Leoncitos. I guess he really wanted to Cuban.
On the way out the door to dinner I found my parent’s stash of Peppermint Bark and could not resist a small piece.
Nothing better to kick off the holiday season then Peppermint Bark!
My meal started with a small salad.
I was heavy into conversation when the salad arrived and completely forgot to take a picture until I was halfway through. It was a nice simple salad that I topped with some Oil & Vinegar.
I had the HARDEST time trying to decide what to heat off their menu. Nothing seemed very intriguing to me at the moment. I eventually decided on the Chicken Taco and Chicken Enchilada Combo. I thought it came with black beans and rice and was a little disappointed to see refried beans on my plate. π
I asked for no cheese on the enchilada or in the taco and honestly did not miss it at all. I’m getting into a habit now of ordering things with out cheese at restaurants and have yet to have an experience where I really noticed it was missing. I ate all of the main items and just a couple of bites of the beans and rice.
I also had a small bite of my Mom’s Cuban. I was almost wishing I would have just ordered this instead. Oh well…
Of course you can not celebrate a birthday with out cake. My brother specifically requested Cookie Cake!! A family favorite! π
I started with a small sliver.
And could not help myself, but to return for another small piece. I ended up wiping all of the icing off on this piece.
Then I got a little tummy ache from all the sugar, oh well it was worth it. π
Now I have ALOT of blog reading to catch up, as well as some good tv! I hope everyone else had just as great of a weekend! Good night!

Looks like a really fun night! It’s cute that you guys had cookie cake. I always request mexican food with no cheese ever since I had mono (now it gives me Horrible stomach cramps) and, you’re right, with all the flavor of salsa and other awesome ingredients in mexican food I haven’t missed it either!
