First of all I want to Thank Erica for choosing me as this week’s host for the Blogger Secret Ingredient Contest. I was amazed how many of you were just trying to cook with Eggplant for the first time! I hope this will encourage you to not be afraid to work with this versatile vegetable(fruit) in the future
Again all of these dishes sound amazing and I can not wait to try them! BUT if I have to choose a winner I will pick……..

Not only was her dish FABULOUS but she was so excited to enter and had such a cute story, she won my heart over. I have never tried to create a Tapenade before and she makes it look so easy I know I will be sure to throw it together in the future

I think both your picks are spot on- I actually tried turning my leftover babaganoosh into a tapenade of sorts (inspired by caroline) and it turned out awesome. And Melissa’s rollups looked super tasty! It will be hard to beat the eggplant decision for a bsi ingredient; but if anyone can do it, it’s her!
