BSI Round Up

by Meghann on November 10, 2008

First of all I want to Thank Erica for choosing me as this week’s host for the Blogger Secret Ingredient Contest. I had so much fun watching all of the amazing entries come in and now have tons of idea of what to do with Eggplant. The best thing about these contests is seeing how creative people get with the pick. You guys did things with Eggplant I would never have though of!

Without further adieu here is the final round up of all of the dishes:

Meghann – Innerworkings of a College Graduate – Balsamic Eggplant Chicken Stacks

Tiffie – Miss Tiffie Munches – Tofu Eggplant Black Bean Burgers

Shannon – Tri to Cook – Eggplant Gnocchi

Gina – The Fitnessista – Eggplant Pizzas

Jess – See Jess Run – Veggie Baked Omelette & Chicken Ratatouille Pizza

Maggie – Say Yes to Salad – Italian Eggplant Stirfry

Lauren – AthlEAT – White Eggplant Ratatouille over Baked Polenta

Caroline – Reader Submitted – Roasted Eggplant-Tomato-Pepper Tapenade

Erica – Itzy’s Kitchen – Eggplant Meatloaves

Biz – Biggest Diabetic Loser – Ratatouille Soup

Mi – Whole Foods for Me – Eggplant “Fries” with Babaganoush Dip

Sabrina – RhodeyGirl Tests – Rotini with and Eggplant Salsa

Melissa – Trying to Heal – Eggplant Roll Ups

Krista – Krista’s Kravings – Eggplant Ravioli

Bobbi – In Her Shoes – Eggplant,Tofu, And Pepper Skewers With Butternut Squash Rissoto

I was amazed how many of you were just trying to cook with Eggplant for the first time! I hope this will encourage you to not be afraid to work with this versatile vegetable(fruit) in the future :)

Again all of these dishes sound amazing and I can not wait to try them! BUT if I have to choose a winner I will pick……..

BLOG READER CAROLINE! and her Roasted Eggplant-Tomato-Pepper Tapenade!!!!!!!

Not only was her dish FABULOUS but she was so excited to enter and had such a cute story, she won my heart over. I have never tried to create a Tapenade before and she makes it look so easy I know I will be sure to throw it together in the future :)

Congrats Caroline! Send me an e-mail so I can send you prize of a Whole Foods Gift Card or if you don’t have a Whole Foods near you we can work something else out.

I also decided that since Melissa’s Eggplant Roll Ups intrigued me so much I have decided to name her this week’s selector of the Blogger Secret Ingredient. So check out her blog at Trying to Heal to see what her pick will be :)

This was really fun you guys!! Thanks again for all of the great participation!

I think both your picks are spot on- I actually tried turning my leftover babaganoosh into a tapenade of sorts (inspired by caroline) and it turned out awesome. And Melissa’s rollups looked super tasty! It will be hard to beat the eggplant decision for a bsi ingredient; but if anyone can do it, it’s her!

Happy monday!
