Great idead here- I’ve actually been doing the same thing with the portabello caps pizzas! I wish I could get them crispy though. The other week I actaully made pizzas the same way, but using slices of eggplant. It came out well, and you got to eat like 12 pizzas so you had all kinds of flavor combo options!

Your mushroom cap pizzas look delicious! But I hate mushrooms! I try and try to like them because they always look so fabulous – but the textrure freaks me out!
