Ultimate Veggie Soup

I was on a mission tonight to load my freezer up with delicious homemade vegetable soup. With the weather changing I have been craving soup and easy to grab frozen soup makes for great quick lunch time meals.

I might have gone a little crazy with the vegetables tonight. I was basically tossing in everything I had in my fridge. I was throwing the vegetables in a little too fast and wasn’t exactly cutting them down to bits size pieces. If I could go back I would take the time and chop the vegetables down to bits and pieces, rather then large chunks. Besides that, the soup was amazing and I know have 4 servings in my freezer ready to eaten through out the winter. :)

Ultimate Vegetable Soup

  • Carrots
  • Eggplant
  • Broccoli
  • Mushrooms
  • Corn
  • Green Beans
  • Tomatoes
  • Chick Peas
  • Whole Wheat Egg Noodles
  • Tomato Sauce
  • Tomato Paste
  • Vegetable Stock
  • Garlic
  • Garlic Salt
  • Pepper
  • Salt
  • Oregano
  • Chili Powder

I put all the veggies into a large pot and cooked them until they were soft. I added the seasonings, tomato sauce, tomato paste, & vegetable stock, then brought to a boil. I added the egg noodles and reduced the heat and simmered for 20 minutes. I then tasted it and added more seasonings as needed.

Alongside my soup I had a slice of Dave’s Amazing Bread toasted with a slice of fat free swiss cheese melted on top.

The cheesey bread was perfect for soup dipping. :)

For dessert I finally got to break into my left over cupcake which Caitlin brought over on Friday.

After three days in the fridge this cupcake was still amazing. I will have to find the Bob’s Red Mill Chocolate Cake Mix and make a batch of these myself for my next special occasion.

I think the extra cheese and crackers really did the trick for me at lunch today because I had no need for a snack this afternoon. :) I even was able to take Abbie for a nice walk after work before I started making dinner. I need to eat cheese and crackers more often!

I got the new SELF in the mail today so I am going to heat up a cup of tea and sit back and relax with the mag. Sweet dreams everyone!

Accidental Napping

9:00am meetings on Monday mornings are apparently not my strong suit. I was more of an observer of the meeting and try as I might to pay attention I kept feeling my eyes drift shut. I was doing the jerking head thing where you shut your eyes, lean forward and then suddenly bolting up to stop yourself from actually sleeping. I stared pinching myself, biting my lip, pulling my hair, anything I could think of to keep me awake, but nothing worked! I was a goner! The meeting lasted an hour and a half and I struggled through every minute of it.

 

Luckily my Supervisor was the only one who did not notice and has not said a thing about my drifting, however I have turned into the butt of all of the Sales Team jokes and have gotten several amusing e-mails over it. Oh well, I definitely deserved it. J I guess I won’t be invited back to any of their meetings.

 

After my nap.. I mean meeting… I had a mini Peanut Butter Cookie Larabar to help me wake up.

 

 

 

After the meeting and the snack I was fine and have been up and motivated ever since. I think I will just have to plan to allow myself to sleep in when I know I have early morning meetings. I learned my lesson on that one. J  

 

For lunch today I had some leftover Spaghetti Squash Casserole with some Non Fat Plain Yogurt on top.

 

 

It’s not as pretty as it was previously, but was still just as good.

 

Once I was finished eating the casserole I was still a little hungry, so I grabbed 3 forkfuls of Homemade Granola.

 

 

 

Then I saw the Kashi Crackers and realized I wanted some cheese and crackers!

 

 

I had 6 Kashi Vegetable Crackers topped with pieces of Reduced Fat Jalapeno Cheese. These hit the spot and were just enough to fill me up.

 

Now I must face the rest of the work day as the word gets around about my morning nap. I just keep repeating to myself that I only have a 4 day work week and it makes it all better. I hope everyone else is staying awake out there!

Short Week

Another weekend has come to a close and another Monday is here. This Monday, however, does not bother me as much since it will only be a four day work week for me. J Friday I am packing up and heading to my old alma mater for some football action. Go Noles!! I can’t wait! more »
