My original plan of just having a snack at the event seminar quickly disappeared as soon as I saw the display of food. Free yummy food is always my main weakness. The appetizers didn’t end up being served until after 5:00 so of course at that time I was starving and everything looked great. I quickly created a back up plan and decided to have a small plate of appetizers for dinner and just have a snack in the evening instead of a full meal. This new plan worked well and I am glad I made the change.
When we first arrived at the event they were serving Non Alcoholic Belinnis made with Peach Nectar and Sparking Cider. I had one small glass and switched to water after that.
I love Belinnis and enjoyed this non alcoholic version as much as the regular ones. I also had a couple of nuts while waiting on my drink.
The keynote speaker for the event was Robyn Waters. She actually gave a pretty great speech on how to think outside the box for marketing. She played a huge part in the branding of Target as an ‘upscale discount store’ and had wrote a couple of books. She signed copies after her speech.
I grabbed a copy of the book on the way out. It was free and should be good reading materials. I really want to read more stories of her success in Target!
They finally brought the food out after her speech and as I said above I was starving with no afternoon snack thus far. The spread of food was great, unfortunately I didn’t want to attract too much attention to myself so I refrained from taking pictures of the layout.
I did manage to get a pic of my plate.
Clockwise left to right – piece of french bread, tomato & mozzerella salad, chicken croquette, salmon in a caper and lemon sauce, yellow squash & zuccini.
The food was really good. I wish I could have grabbed some more veggie, but these little plates don’t hold much.
Of course, I couldn’t resist dessert.
They had these cute martini glasses filled with Mango Sorbet that you could top with berries. I went a little crazy with the berries, we all know how much I love fruit.
My co-worker talked me into trying the Milk Chocolate Creme Brulee. I was this close to being able to successfully not eat it, but on the way out she grabbed one to try and I caved!
It was good though! It had a great raspberry sauce on top that paired perfectly with the chocolate.
I was pretty full after the event. Since, I didn’t have to cook dinner I decided to treat Abbie with a drive to the doggie park. She had a blast and is now passed out on the couch next to me. Thank you dog park!
When I returned from the dog park I decided to have my evening snack.
I whipped together some ricotta cheese, almond butter and honey. I then slathered my creation onto my last Kashi Blueberry Waffle. It was the perfect yummy snack, light and satisfying, just what I needed.
