More Peanut Butter Please

by Meghann on October 13, 2008

Abbie and I enjoyed a nice leisurely walk today in the nice hot, humid air tonight. We only walked a mile and I was sweating! What happened to that nice fall weather we were experiencing? I swear it was cool here for a while and now its back in the 90s. Is it too late to change my mind about living in central Florida and move north? I’ve never actually lived in the snow, but I’m sure I can handle it. :)

At least Abbie and I did get our afternoon stroll in. I mean how can you keep this face cooped up in the apartment all day? It’s just pitiful!

Our walk did build up my appetite which was perfect since I had a delicious meal planned for tonight. I had a wonderful one bowl meal that filled me right up.

This was a great meal. I loved all of the vegetable and the sauce on the baked tofu was awesome. I think next time I would add a few red pepper flakes for a little spice, that would pair nicely with the sweetness of the sauce.

For dessert I whipped up a Peanut Butter Rice Krispie Ball

The Peanut Butter treats I brought to work today were a hit, but sadly they are now all gone. Apparently I didn’t have enough of them last night, because that’s all I was craving tonight. So I made a quick ball of the treat. I combined peanut butter, honey, chocolate chips, and puffed brown rice until it all melded together into a ball. This is a great quick treat. It was peanut buttery, chocolatey, and yummy!

This afternoon I had a snack of Almonds that held me over through mine and Abbie’s afternoon walk.

There is so much great TV on tonight, not to mention the Desperate Housewives episode I have recorded from last night! Look out couch, here I come!

Another Great Lunch

by Meghann on October 13, 2008

Today my lunch was perfection. All of the different flavors were amazing. I took my time chewing and enjoying every last bite.

I toasted two amazing piece of Dave’s Killer Bread. On one piece I smeared Low Sugar Strawberry Preserves; on the other I had Almond Butter coated with Apple Slices. This bread really is AMAZING! It’s sooo nutty and flavorful it really doesn’t need anything else on it. This whole meal was actually based on me wanting to consume more of this bread!

On the side I had the left over Apple Slices and leftover Golden Nugget Acorn Squash Pasta. I only had a tiny amount leftover, so it was perfect as a side dish for this meal.

I loved having all of the different flavor choices on my plate. I would take a bite of one flavor then pick and choose what my next flavor choice would be. I enjoyed this meal very slowly and appreciated every bite.

For my mid-morning snack I nibbled on a mini Pistachio Larabar and a Strawberry Fruit Strip.

Today, I was very productive and wrote up my meal plan for the upcoming week. This has been a habit I picked up when I first started losing weight and I always felt it to be a helpful element. If I know I already have something planned for dinner waiting for me at home, then I am always less tempted to hit up a random drive through while I am out.

Does anyone else make up meal plans for the week? Mine usually revolve around the weekly Publix circulars where I can check out what is on sale and design my meals around those items.

Monday Morning Jolt

October 13, 2008

Every Monday I have the same debate with my self: should I go for a run or stay inside and do work out with the resources in my apartment? Does anyone else have the same Monday debate? Most mornings I always would rather run, but for some reason Monday’s I always have to motivate my more »
