Abbie and I enjoyed a nice leisurely walk today in the nice hot, humid air tonight. We only walked a mile and I was sweating! What happened to that nice fall weather we were experiencing? I swear it was cool here for a while and now its back in the 90s. Is it too late to change my mind about living in central Florida and move north? I’ve never actually lived in the snow, but I’m sure I can handle it.
At least Abbie and I did get our afternoon stroll in. I mean how can you keep this face cooped up in the apartment all day? It’s just pitiful!
Our walk did build up my appetite which was perfect since I had a delicious meal planned for tonight. I had a wonderful one bowl meal that filled me right up.
Baked Tofu Stir Fry
Sauce
- Rice Wine Vinegar
- Sesame Oil
- Soy Sauce
- Honey
- Garlic Salt
- Pepper
Stir Fry
- Brussel Sprouts
- Corn
- Mushrooms
- Onion
- Carrot
- Sesame Seeds
- Brown Rice
- Tofu
- Mix the above sauce ingredients until a desired flavor is achieved
- Dip the tofu slices into the sauce, place on baking sheet, sprinkle with sesame seeds, and bake in the over at 425 degrees for 20 minutes
- Coat a wok with sesame oil, once hot add vegetables and heat until veggies are soft
- Pour sauce over veggies and let cook for 5 minutes
- Cook brown rice according to box directions
- Once all of the elements are finished fill a bowl with rice, veggie mixture, and tofu
- Sprinkle with sesame seeds
This was a great meal. I loved all of the vegetable and the sauce on the baked tofu was awesome. I think next time I would add a few red pepper flakes for a little spice, that would pair nicely with the sweetness of the sauce.
For dessert I whipped up a Peanut Butter Rice Krispie Ball
The Peanut Butter treats I brought to work today were a hit, but sadly they are now all gone. Apparently I didn’t have enough of them last night, because that’s all I was craving tonight. So I made a quick ball of the treat. I combined peanut butter, honey, chocolate chips, and puffed brown rice until it all melded together into a ball. This is a great quick treat. It was peanut buttery, chocolatey, and yummy!
This afternoon I had a snack of Almonds that held me over through mine and Abbie’s afternoon walk.
There is so much great TV on tonight, not to mention the Desperate Housewives episode I have recorded from last night! Look out couch, here I come!
