Secret Ingredient Attempt # 1

I love all the built up excitement over today’s lunch! I hope not to disappoint. J I promise if this doesn’t catch your fancy then what I have in my head for dinner should. I have been following these secret ingredient contests for a few weeks now and am very excited to finally participate in one and hope to continue to do more in the future! I’m submitting this ad entry # 1 to Care to Eat

I present to you…..

 

Twisted Apple Egg Salad Pita

Ingredients

2 hard boiled eggs

 1 small red apple

2 small carrot sticks

2 slices of cucumber

2 tbsp non-fat plain yogurt

2 tbsp honey mustard

Green Onion

Cinnamon

Ground white pepper

I basically combined all of the ingredients in a bowl and then stuffed the pita.

 

I made this lunch last night and never tasted it until today. I was actually a little scared about the combination of apples and eggs, but OMG this was delicious! And very filling! I think the cinnamon thrown in there really brought all the elements together, I could really taste it in there and it just complimented everything perfectly.

 

Oh yeah, on the side I had some leftover steam green beans.  

Now you will have to see what I brainstormed for tonight. J I’m actually quite excited about my dinner myself, I kind of took a meal I had from earlier in the week and reworked it into something fun. You will see. This secret ingredient stuff is fun! J

 

This morning I snacked on this HUMUNGO pear.

 

It was giant and yes, I ate the whole thing.

I also had cup of this Celestial Seasonings Honey Peach Ginger Tea I picked up over the weekend. 

 

I usually have a hot cup of tea when I first get to work because 1) it’s freezing here and 2) my mouth likes to be entertained. This was a new find for me and different then what I usually buy. The honey ginger peach flavoring was definitely too sweet for me. It was almost overpoweringly sweet. I assumed it was from the honey mentioned in the title, but when I flipped the box around to look at the nutrition facts look what I found.

 

 Stevia is listed as a top ingredient. With the talk on stevia and other sweeteners on Hangry Pants blog the other day, I just found it very interesting to see stevia listed there. It makes me want to go back and read all of the other boxes of teas I’ve had in the past and see what the ingredients are there too. I guess I should be more careful with my labels.

 

I just wanted to share my little discovery.

i love stevia! i know i shouldnt eat it too much, but i have a little everyday in my coffee 🙂 better than splenda… right??? right??? oh who knows.

I love your take on the secret ingredient! Apples and eggs are so good together – like a waldorf salad in a wrap.

That’s really interesting about the tea… I wonder how many teas that I’ve thought tasted “weird” were actually just stevia-infused. Interesting.

I love liquid stevia, but the powdered is to bitter for me!

Thanks for posting the tea review. I’ve always wanted to try that flavor & now I don’t have to =P

I love apples in chicken/tuna/egg salad. Mmm.

stevia is everywhere! i still haven’t tried it but i really want to. probably not in the form of that tea, though 🙂

The recipe sounds great! I’m almost glad that I was too busy this morning to hear about lunch’s upcoming special ingredient… I don’t know how I would’ve been able to focus! Now, of course, all I can think about is the delicious dinner you have in store for your tummy and our eyes. Gosh, this waiting thing sucks 😉

Wow! Interesting about the tea…I’m going to go check all of my celestial seasonings in the cupboard!! Wouldn’t have thunk it :). And great creative ideas with your apples!
