Working the Muscles

Boy, did I get a work out at work today.

One of my duties as the marketing assistant is to keep inventory of all of our marketing materials. Let’s just say the last time a person took any sort of inventory was back in July, so it was a little behind. I had to move quite a few very heavy boxes from one end of the office to the other and for some reason no one was offering to help me, at least they were helping me with the doors. My arms actually feel a little sore. This was something I was putting off since I first started last month, so it was nice to finally have it all in order. I can mark that off of my to do list for now, the fun part will be trying to keep up with it.

While going back and forth with heavy boxes, I took a short break for this juicy peach.

Nothing like a nice refreshing peach to get you pumped for some heavy lifting!

For dinner tonight I decided to create a recipe that revolved around the yummy goat cheese and dates I had leftover. The combo was so great in the salad I wanted to explore other alternatives for it. After a quick glance in the fridge I decided to make a simple Frittata.

Goat Cheese & Date Frittata

Ø 1 whole egg

Ø ½ cup of egg whites

Ø ¼ tub of Goat Cheese

Ø ½ a yellow onion

Ø Handful of mushrooms

Ø 4 chopped dates

Ø 1 clove of garlic

Ø Green onion

Ø S&P

Preheat the broiler on high. Spray a small oven proof frying pan with Pam. Chop the onion and put them in the hot pan. Sautee the onions, garlic and mushrooms until soft. In a separate bowl, combine the egg, egg whites, seasonings, goat cheese and dates. Once the onion and mushrooms are soft pour the egg mixture into the pan. Make sure the temp is on medium and let it sit for 5 minutes. Once the eggs start to pull away from the pan, remove the pan from the stove top and put it under the broiler for 5 minutes. Once the center of the frittata seems firm, you are done.

The frittata was delicious. My experiment was very successful, I proved that goat cheese and date are a great combination in any situation.

I also oven roasted some broccoli and brussel sprouts to go along side the frittata.

I went to Publix after work and they were more then happy to let me exchange the defunked 12 pack. Now, we just have to wait and see if Canada Dry ever gets back with me about the mix up. I sent them an e-mail and I got one of those automatic replies that said they would respond to my request in the next 72 hours.

I have been planning this dessert all day in my head and it was definitely worth the wait.

YUM! As soon as I was done dipping, I had to put the chocolate bowl under running water to keep myself from licking it clean. You will definitely be seeing this dessert again in the near future. 

I am so behind on all my DVRed shows, so tonight will be catch up on TV night.  Let’s see how far I get before I pass out. Good night!

choc-dipped meringues!!! and i never would’ve thought to put dates in my frittata… could you taste the sweetness in there? (i’m not surprised, goat cheese goes with everything in my book!)

Oh wow. Those meringues look delicious and YOUR DINNER IS HEAVEN. I love a little sweet and savory! Hope you got to relax while watching TV!

LOOOOOVE the roasted broccoli & brussels sprouts!! Yum!!

Don’t even start about being behind on DVR’d shows – I’m literally WEEKS behind on mine!!! 🙁

First off, that dessert looks out of this world! I would have done the same thing with the chocolate bowl hahah. Thats awesome that you were able to get a workout at work! I’m glad the soda got exchanged….let us know if the company gets back to you!

I’m pretty much obsessed with ANYTHING involving goat cheese!

Oh man that melted chocolate…I’d have to do the same thing to stop from just licking the bowl 🙂

WOW that frittata looks so good!! goat cheese is one of my faves- i might need to try that soon!

Very nice dish you came up with…. I love being spontaneious and mixing ingredeitns i have left over… and those dipped mere. look great!
