I officially registered for the Miracle Miles 15k today! I was holding off registering until I had a little money in my bank account (Thank you first pay check!). So, now it’s all official I have a receipt in my hands and a race day packet waiting for me at Track Shack!
This is my first 15k so I am very excited/ nervous. I have only ever done 5ks in the past, I actually just ran my very first 5k this past March. I feel crazy for taking on a 15k so soon into my running career, but I think I’m ready. My legs are just itching to go the distance.
If you think running the 15k is crazy, I plan on running the OUC Half Marathon in December!! I am also very excited about this race. I only started running this past January, so competing in a half marathon less then a year after I started running will be a huge accomplishment for me, no matter what time I finish in.
The race I really want to do, but so far do not have the money to fess up for it, would be Disney’s Princess Half Marathon in May. You have to register early because it fills up so quickly, I just don’t think I can commit so much money to a race so far in advance. It would be my dream race though, you get to run through all the parks and all of these behind the scenes areas that would be really cool to see. Oh well, I guess I will just have to see what happens.
Ok, enough race talk (I’m sorry I’m just so excited to be officially registered) it’s time for the food. J
When my tummy started to rumble mid-morning I snacked on some carrot sticks and roasted red pepper hummus.
I really like this flavor of hummus; it has an extra bite to it that pairs so perfectly with the carrots.
My lunch today was quick and easy. Which, since I drive home for my break, all of my lunches are usually quick and easy.
I had a boca burger with fat free swiss cheese, lettuce and ketchup on a whole wheat English muffin. Can you tell I’ve been playing with different angles with my food? Let me know what you think!
On the side I had left over salad from last night’s pot luck. I am going to have to remember this salad combination for the future and I’m so happy I have left over of my homemade Sun-Dried Tomato Vinaigrette.
Like I said, a quick and easy healthy meal.
