Today’s lunch was another meal of delicious left-overs.
I heated up some of the Refried Black Bean soup I made on Sunday night. I really liked my addition of the sweet potato, that flavor really popped out for me when it was reheated.
On the side I had a juicy plum and a serving size of Back to Nature Wheat Crackers.
These crackers remind me of Wheat Thins, but the nutrition facts on the box are a lot more appealing. Nothing goes better with left over soup then some nice crunchy crackers.
While gluing my 1500 envelopes shut this morning, I snacked on a dried pineapple ring and some dried mango… I am so close to having the envelopes out of my life. Yay!
This afternoon should be interesting. Our sales team is sponsoring a ‘Guacamole Challenge’. They have split our whole office into teams for the event. On my way in from lunch I saw a margarita machine being delivered. I can’t wait to see how that goes. Guacamole is one of my favorites, I’m going to have to keep my nibbles to a minimum as best I can. My team has a pretty original recipe for our guacamole. I will leave that for a surprise for this evening’s post. Stay tuned.

haha, I work for a small software company in Orlando. There are only about 70 employees so they’re all about getting us together for team building activities.
