Kitchen Sink Gumbo

I’m really bad at turning every recipe I make into a ‘kitchen sink’ recipe. I just want to have as much veggies into my meal as possible so I usually just throw in what ever is in the fridge. I think this stems from the fact that when I’m at the store I pretty much buy every vegetable available because in my head I think I can eat it all. Then, the week flies by and I realize I am just one person trying to eat all of these veggies before they go bad. What can I say? I love veggies!

Shrimp was on sale this week so I decided to build a gumbo around my shrimp.

Kitchen Sink Gumbo

(I never measure anything out, I just kind of toss things in as I go I really don’t have any measurements)

·         Zucchini

·         Yellow squash

·         ½ pound shrimp

·         ½ of an onion

·         4 oz tomato sauce

·         A squirt of tomato paste (from my new cool tube!)

·         Can of vegetable broth

·         Handful of mushrooms

·         1 tomato, diced

·         A bunch of okra

·         A spoonful of garlic

·         Thyme

·         Oregano

·         Chili powder

·         Garlic salt

·         S&P

I think that’s it. I sautéed the veggies first and then poured in the liquids and spices. I let those cook for 15 minutes and then added the shrimp for the last 5 minutes of cooking. It came out pretty good.

On the side I tried my bulgar wheat I discovered this weekend. It was pretty good, almost like cous cous.

As I’ve said before I have an awful sweet tooth so expect a dessert with every dinner. Tonight I nibbled on a 100 calorie Klondike Ice Cream Sandwich.

I don’t even want to know what bad stuff is in this yummy creation. Atleast I don’t have these every day. It’s like a once a week treat. J

This is what my afternoon was like.

 

Oh well. They’re all stuffed now I just have to glue them shut and run them through the stamp machine and I’m done. Yay!

 

Around 4:00 I had a mid afternoon snack of 100 Calorie Kettle Popcorn. (Two 100 calorie things in one day? I swear these are the only 100 calorie packaged things I own.)

It’s storming outside and Abbie is hugging my side. She’s such a scaredy cat/dog.

Baloo was not lying about the prickly pears

For the past day I have been experiencing all of these little splinters in my fingers and I could not figure out where they were coming from. Then it suddenly dawned on me, the cactus pear! The cactus pear is after all the fruit of the cactus. They ‘deneedle’ the fruit before they sell it, but as true with any other part of the cactus there are still micro needles that remain. They feel just like a splinter we they insert your skin. So please be forewarned, if you re are going to handle the cactus pear at the store or at home, be sure to realize you will probably end up with a couple of stray micro needles in you palm and they’re kind of annoying. Oh well, lesson learned.

 

Today has been another day of stuffing envelopes… joy.

 

Around 10:30 I got hungry/ bored of stuffing and had this Honey Roasted Granola Bar from Whole foods.

 

These bars are all natural, with a short ingredient list and very filling. Yum.

 

Lunch today was some left over Snobby Joes. I think the Joes were even better today then on Friday. I’m always a big believer in the fact that food sometimes just taste better the next day.

 

I stuffed a multi-grain pita with the snobby joe mixture and had grapes, carrots and cucumber slices on the side with hummus.

 

This was a very filling lunch and will hopefully keep me fueled through a few more hours of stuffing!
