I feel like an intern again…

We have a new Vice President of Sales at my work, so my job as a marketing assistant is to let it be known to all of our clients who our new president is and what she plans to do with our company. So I did all the fun stuff of drafting the letter, putting together a 1500 person contact list and printing personalized letters thanks to the power of mail merge. Unfortunately now I’m on to the not so fun part. I now have the duty of manually folding and stuffing all 1500 letters. Not fun.L I feel like an intern again. But at least where I interned we had a nifty paper folding machine that became my best friend as an intern. As a big girl at my big girl job I have no such machine. Boy do I miss that folding machine. So you all know what I will be going until that magic clock on the wall strikes 3:30 (yes I get to leave at 3:30 today.. woo hoo!)

 

Anyways, on to the food!

 

My midmorning snack was a fantastic treat. At dinner on Wednesday with Jenna and Caitlin, Jenna presented us each with 2 of her amazing oatmeal bars. I devoured one yesterday and was looking forward to eating this one today.

 

It was soooo good. All my tummy had to say was that it was kind of hungry and this thing was in my mouth. I’m so sad it’s my last one though. It was so good. J

 

I have the luxury of being able to go home on my lunch breaks. When I was looking for apartments that was definitely a key factor. I found one that is exactly 10 minutes from where I work, which give me ample time to run home, let Abbie out and make myself a quick lunch while catching up on my 12 o’clock news.

 

Today’s lunch is a new favorite of mine. I have never been a fan of PB&J or really any sandwich that has PB on, but thanks to the power of blog world I have discovered the wonderfulness of almond butter. It’s actually my new best friend.

 

I made a scrumptious Almond Butter quesadilla.

 

And of course I had to put some Apple slices in there to complete the filling.

 

On the side I made a small salad with any easy to get to veggie I could find in my fridge.

 

On the bottom there’s red leaf lettuce covered with mushrooms, banana peppers, cucumber pieces, tomatoes, grapes and a tablespoon of this yummy Mango Poppyseed dressing I found at Publix. The poor grapes were on there last day, even though they don’t exactly look right, they were still tasted ok. I ended up throwing out the rest of the bag anyways. I hate wasting food, but that’s what happens when it’s just little old me trying to eat as much fruit and veggies as I can before they go bad.

 

This was a very filling and satisfying meal to get me through the rest of the day.

It's Finally Friday!

This morning I was able to sleep in a tiny bit since I did not have to be at work until 8:30am rather then 8. So, instead of my alarm going off at 5:45 it went off at 6:00.. it’s really amazing what a HUGE difference those 15 minutes make in sleep world. Instead of my usual run this morning I decided I would finally break into a workout DVD I got through Netflix at the beginning of the week. When I first started to work out I discovered Netflix had this whole selection of work out Dvds and since I am too cheap to buy my own and get really bored of doing the same thing over again I really got into ordering the work out DVDs and doing them before work. Lately, I have gotten so into running and training for my 15k coming up that I keep ignoring the workout Dvds that come and just feel like running in the morning.

This morning I did Kathy Smith: Build Muscle, Shrink Fat it wasn’t that bad of a DVD actually. It was about an hour long with a 10 minute warm up, 35 minute weight/cardio session, 15 minute core work and then a 10 minute cool down. I was nice and sweaty at the end of it. I will probably try another Kathy Smith DVD in the future. She wasn’t as annoying as some of the instructors can be and she looks just like Edie from Desperate Housewives!

I have to tell everyone I am a huge cereal fan in the morning. For some reason it’s what I crave every morning. I have about 5 boxes of various cereals in my cabinet right now and because of a recent sale they just happen to all be Kashi. I am a big fan of variety and like to mix it up.

 

Instead of trying to pick one cereal I like to mix and match. This morning I decided on a 3/4 cup of Kashi Heart to Heart and a 1/4 cup of Kashi Autumn Wheat. I have never been a huge fan of milk, I even remember back to kindergarten days when I used to refuse the carton of milk they gave me at snack time. Milk never makes it in my cereal. Instead, I like to be very inventive with my cereal. I try to incorporate whatever fruit I have on hand and usually something mushy just to keep it together. Recently I discovered unsweetened applesauce is perfect with dry cereal!

 

This morning I used the last of my strawberries ( so sad because now they’re out of season and I don’t know when the next time I will be able to buy them is), a handful of green grapes, and about 3 spoonfuls of applesauce right on top. Yum! If you haven’t tried applesauce on you cereal I highly suggest it. I am obsessed!

I’m so glad it’s Friday I have a great weekend planned ahead and because of logging extra hours during the week I get to leave work early today! I hope everyone else has a Happy Friday!!
